Is this movie getting popular again or am I just going nuts? I only heard of it a few weeks ago when a shitpost of that bum biddy biddy song and ever since I've been getting Oney Plays videos related to it in my recommended, people have been mentioning it on Reddit, I've seen a parody of the poster with every single fandom I'm in, I feel like I'm going nuts. Why am i seeing it everywhere
Haven’t watched the majority on your list, however: angles egg (requires an acquired taste), Akira, Watership down, 9, grave of the fireflies, coraline, paprika, perfect blue, across the spider-verse, all of the rebuild evangelion films (keep in mind they’re not as good as original series + film, but they’re still good)

If you feel like watching something relatively old and obscure there's Flight of Dragons (has James Earl Jones voicing an evil wizard so that's always fun)
If you accept series then there's Pantheon which just got its second and final season. If you do plan to watch this you'll probably need your pirate hat as the only place you can currently watch this American made show is in Australia

I'll recommend The king and the Mockingbird, just for the fact that its a masterpiece that's not that well known. Not sure you'll like it but it's worth watching.
I'll also add Azur & Asmar, it's an absolutely gorgeous movie. Every kid in my generation in France grew up with Michel Ocelot's animated movies, they are very unique pieces of art definitely worth a try (especially if you like tales and legends)

Also was surprised to see that someone else knows what cats don’t dance is!

I should convince you more so im editing this comment to give you a synopsis and gush about it a little.
Redline is the directorial debut of Takeshi Koike and is animated by madhouse, yknow, the people who animated the 98 trigun anime, kirby right back at ya, death note, hunter x hunter and a lot more.
Redline follows the main character, Sweet JP, a human in the far future who makes a living participating in a high speed illegal underground race. The movie starts in the middle of the race known as the Yellow Line, the qualifying race for the biggest race, the titular Redline, which can essentially be summarized as F-ZERO if it was animated.
The movie uses its medium to the fullest, being a masterful show of skill in both animation, sound design and direction. Every frame is completely hand drawn and is a piece of art in its own right, the vehicles are all unique and highly detailed, the animation is fluid and works together witht he music and sound design so well that you feel the supersonic speeds the characters experience throughout the races. The movie took 7 years to animate and made Madhouse lose a shit ton of money on production it didnt make back as it never took off, likely due to lack of advertising.
The movie has an amazing eye for detail and has a ton of enjoyavle characters, including but not limited to: Josuke Higashikata if he was the other kind of drag racer, comedically oversexualised girls parody gundam, adam smasher from cyberpunk, a pig (both of the cop and the swine variety), space robot nazis, and a bio superweapon called "funky boy" which is played off 110% straight.

If you like Ghibli movies, I'd give Castle in the Sky a try. It's my favorite. You may also enjoy Howl's Moving Castle
