Pinkertons in Houston Heights area is one of my favorite places to eat. Itā€™s considerably more expensive than chain places but is second to none. Also try Roegles in Houston off Hillcroft/Voss and Westheimer. They have amazing bbq

BBQ used to be a take away meal for a whole family. When you would get a bunch of bbq, having bread would extend it. When I grew up, we might each get a little of what we liked; some beef, some pork, some chicken. Then we would make a sandwich out of it. These $75 plates for one person, for me years ago, was a whole family dinner (for like $15). So respect the white bread. It is an homage to where bbq comes from.

It really is a throwback to the way bbq used to be. You used to get a couple of pounds of bbq a few quarts of sides and damn near a loaf of white bread for about $20. Many of the old timers in Texas still only eat this cheap white bread with everything. There are a few places in dfw that offer several different types of bread to choose from. I was raised eating bbq with white bread and donā€™t think I will ever change but to each their own.

Barbecue used to be cheap food, no frills. In Texas, local town meat markets would cook off the cheaper cuts they couldn't sell (shoulder clod, brisket, grind it up to make sausage, etc) and serve it at lunch time to day laborers and people buying meat. It's always been served with white sandwich bread because of this. Plain saltines are also from this too. It honestly complements the meat the best. It's soft, easy to chew, and is a blank canvas for whatever mest suits your fancy. Merely a vehicle for great barbecue.

They're decent. Last time I was there I walked around to the pit area and talked to the guys there, they let me in and gave me a tour. Millscale 1000gal pits plus wood-fired rotisseries. Locally people mostly complain about the price, but they really aren't much more expensive than similar options (which are all expensive).

Why does every BBQ joint y'all go to serve everything on a baking pan? I live in KC and get BBQ all the time and only certain meals are served this way at most restaurants I go to.

Restaurant efficiency, they last forever, and they don't break if you drop them. Those baking pans fit in a commercial dishwasher like they grew there. It's super easy for the dishwasher to load and unload those trays compared to fry baskets or round plates. They don't break like plastic baskets or ceramic plates. So even though there's more overhead expense, they will save the restaurant money over time. They also have a better resale value when/if the restaurant changes ownership.
