Double scimitars right from the Opening scenes in the Mindflayer ship, as early as level 1. Plenty of good enchanted Scimitars along the way too until you reach the Katanas

I would go for an Elk Barb/Thief 8/4 Barbarians get bonuses for not wearing armor. Wildheart with Elk stuff gives you tons of move speed Thief gives you an extra bonus action to attack with your off hand

6 Battle Master Fighter /2 Monk / 4 Thief Rogue You'll get 3 feats because fighter gets 1 at level 6 too, and you get two weapon fighting Action Surge 2 Monk will give you unarmored movement and let's you use any non heavy weapon you are proficient with as a monk weapon: using your DEX instead of STR, if it's higher for hit and damage. Thief Rogue will give you an extra bonus action so you can make 2 off hand attacks per round. No Evasion, base Unramored Movement 4 Battle Master /8 Shadow Monk Assuming you don't want to use unarmed attacks, in which case Open Hand is better. You'll still get 3 feats and the two weapon fighting style, and use DEX for non heavy weapons, Action Surge Improved Unarmored movement, Evasion, Stunning Strike (weapon version), Deflect Missiles No extra offhand attack Way of Shadow gives access to Shadow Step, Cloak of Darkness(conditional invisibility) and some spells that can of use If you take fighter at your very first level you'll be proficient with pretty much all weapons (and may wear any armor/shield but since you don't want to it's not that significant). Being DEX focused and having a fair amount of Wisdom along with the right gear (ie. Bracers of Defence, The Graceful Cloth) can yield pretty high AC fairly early on already.

Def are katana mods (basket of equipment mod & im sure others), havnt found one ingame but i havnt seen every item either. Open hand monk 6+thief rogue 4+Fighter 2. Goes has unarmored defense, take dual wielder at level 4, go Dex>Wis>Con, use basket of equipment mod for katanas, and have a spellcaster cast longstrider on you at start of the day, then they cast jump on your Pre-combat if you want even more bonkers speed. Potions of haste also boost speed and get you another atk or 2 on top of having 4-5 a turn XD and 2 extra on turn 1. And potions of giant strength increase your jump distance a TON.

When I see unarmored, I think you got a few options.   Anyone with Mage armor, or warlock multi for Armor of Shadows. Monk for 1 level Barbarian for 1 level Draconic Sorceror for 1 level All of which will unfortunately use Dex. Easier than any of those would be just to use light armor, or even just chsnge your character  to show their camp clothes. But let's go with the other options. Mage armor you could technically get anyone to cast on you, but I'm going to say that instead you Take Eldritch Knight Fighter.  You can get Mage Armor, as well as the shield spell, and even Longstrider to increase your movement, all on your own. You also get the Two weapon fighting style.  Going up to level 11 will get you 3 attacks, plus your bonus  action attacks. You only need dex foe this multi, thouhj some intelligence might help if you get mote offensive spells. Or let's explore Monk. You only need 1 level for unarmored defence and the bonus movement.  From there, you probably want proficiency in Scimitars and later longswords (what the Katanas technically are.)   So you can add a level or 2 of fighter for the fighting style, action Surge, and weapon proficiency.  Or you can add in some Ranger instead. Youll get a subclass  with  features,  as your favoured foe goodies. Gloomstalker will get you an extra attack the first round of combat, while Hunter you Hordebreaker or Collosus Slayer, and eventually Whirlwind  attack  all the way at level 11, which works perfectly with a single level of monk. Any Ranger will be able to get Longstrider, and enhanced jump, same as your Eldritch Knight. Only Gloomstalker will get Misty Step though.  You'll build Dex and Wisdom  for these multis. And Barbarian,  which might be a nice little dip before going something like Ranger or Fighter. You can get defence that works with Constitution and Dex, so basically you get to only focus on 2 stats and become much more hardy in the process. Plus reckless attack and Rage. Otherwise, a one level dip into a caster  for mage armor. Not sure if any fit your theme. Personally, I can see Eldritch Knight or Monk fitting your idea well. As for the rest of your character  classes,  going 11 levels in Fighter gives those 3 attacks. Something to consider.  For everyone else, 3 levels in thief for a second bonus action. You may decide to go 5 ranger and 3 Rogue, plus  however you get your unarmored defence, which will give you your 4 attacks as early as level 9. Or you can go Eldritch Knight and Thief and get 4 attacks at level 8. Not a bad way to go, leaving  you 4 more levels to do whatever you desire. Or just go more fighter for more feats. A Eldritch Knight 8, Thief 4 would get 4 feats. Adding all of them together, Eldritch Knight  Ranger and Thief Rogue,  you can also make an interesting character. You can still get 2 Feats this way too Eldritch Knight 6, Ranger 3 Rogue 3,  or Ranger 5, Eldritch  Knight 3-4, Rogue 3-4.  Whichever you prefer.
