I just made the same Krusteaz mix two weeks ago and the same thing happened! Pretty sure it sunk because it didn't finish baking, I followed the box directions for 45 minutes.
I've made the Ina Garten lemon pound cake before and didn't have sinking so I checked her recipe as my sunken loaf was cooling. She suggests for 45-60 minutes at 350, and test the middle before removing. So seems like a few extra minutes in the oven is the way to go.
I feel badly that this also happened to you, but now I don’t feel so bad about my flop! After initially doing the toothpick test, I decided to keep it in the oven for a little longer just to be “safe”. I poked quite a number of holes, many in the middle, to ensure the toothpick came out clean everywhere, and it did, plus it looked done.

OK, I can understand it. Believe it or not, Carvel vanilla soft serve is my absolute favorite. We were going to go there today, but ended up with a change of plans. Whenever we go I get a quart of vanilla soft serve layered with chocolate crunchies “to go”, along with an extra container of chocolate crunchies. Carvel is the best!
honestly that’s such a good order. i love chocolate crunchies. i’ve never considered getting more than a medium (cause in my house it’d be gone lmao) but this made me consider it deeply. now i want carvel lmao

I've made it into something like a bread pudding and others into a bake. If banana or pumpkin (or similar) bread deflate like this or aren't fully baked, cutting them into smaller rectangles of varying sizes, tossing them into a glass casserole type dish, adding spices and a mix of egg, milk, and syrup, and baking results in a delicious French toast stick like bake. (I'm missing something in that but cannot think of what.)
I cubed it and dried it out a bit, then put it in a bowl and poured some milk over it. Essentially a very lazy bread pudding lol. It sounds unappealing, but it was whimsical and not terrible. The 5 year old approved.
Cake pops/cake balls are yummy! Lemon dipped in white chocolate is fabulous! There are tons of recipes and it isn’t hard and looks high end when really it’s a cover up for a fail lol.
This was from a boxed mix and made exactly as instructed with nothing extra added. I agree that a recipe using real lemons, lemon peel and poppy seeds would taste much better, and hopefully turn out better for the effort.

Well, I saw another person who said they had the exact same result from the same stuff. Sounds like a batch of Krusteaze had a little flaw in it. In any case, you did your best to snatch victory out of the jaws of defeat. 😊
Actually, once I split it and added a generous layer of lemon curd and coconut flakes, then topped the whole think with lemon glaze and let it sit overnight, it was really quite tasty.

I’ve found that many times baked goods that are not “attractive” can sometimes taste the best. Unfortunately, that wasn’t the case with this. I love lemon, and (in my opinion) didn’t think it had much lemon flavor. I’ve gotten many good suggestions in the comments here on how to “fix” it.

How many lemons and how much peel did you use? Also poppy seed is great in this sort of dish. Really brings out the citrus flavor
