Back seats fold upwards so you can place tall stuff in the back like bushesetc. if garden things are a big deal :p. If you Google it can see people getting bikes in there and stuff. But obviously means can't use the back seats and it's still quite a small car
It actually is shocking how much space the Jazz's have with the seats folded, they are cavernous for such a small car. Really are the perfect choice for people who need a large boot yet don't want a large car.
We managed to get quite a bit of furniture in ours when emptying my grandmother’s house, we got more in that than in my my dads forester! Brilliant cars!

I have a 2014 Civic, and my girlfriend is a gardening nutcase. Carrying tall plants is a doddle with the back seats up (they fold up like cinema seats as well as down like normal car seats).
You can also mix'n'match, i.e. put one seat up and keep the tall plant on the floor, and fold the other seat down and take home bags of soil in the boot.

As others have said: either a Jazz, or a Civic if the Jazz is too small.
For 6k, you could pick up a decent Mk7 Golf manual, albeit with mileage on the higher side of things. Or additionally, a Mk6 would be perfectly fine as well. For your mum, I’d suggest avoiding the TSI engines. Either go for the TDI or the 1.6 FSI.
How about a non-ecoboost [Ford B-Max](https://www.autotrader.co.uk/car-details/202403077328201)? The 1.4 is fine for pottering around, and while the boot is large enough as normal, the back seats easily fold down into the floor to become a [massive load space](https://www.ridc.org.uk/sites/default/files/styles/lead_image_content_desktop/public/field/image/car/3495_2893_14_2893.jpg?itok=osh19WX_).
Only because the Jazz was already suggested, plus I think the B Max is bigger inside, particularly in van mode. Granted, it doesn't have the magic seats but you can get a newer model for the money, and being a Fiesta platform they drive better too

There should be a decent amount of choice at that budget for a midsize, think: Octavia, Superb, 3/5 series, C/E class, C5, Mazda6, V70, etc. Probably go for an estate variant.
If usage fits a diesel, most 2L class engines aside from the 2.2 in the Mazda are good, if petrol avoid VAG and BMW.
We have a V50 and it's very comfortable. The 1.6 diesel is also very fuel efficient. It's not very big but I think it's good enough. Especially with the back seats folded.
They are also quite cheap now. I'd recommend the facelift as I think it looks better and it has more features.
Ours is 2009 with a 5 speed. I'd like a 6th gear but oh well. It also doesn't have Bluetooth but it's not big deal as I can just have the phone on the speaker mode in the center console.
It does have a diesel heater which I think is great. Going into a warm car in the winter feels awesome. The engine also likes it too.

This should be right under the Jazz imo. Brilliant cars, especially when you take the rear seats out.
Might be a struggle to find a good one for 6k they hold value.

I loved that feature in the Civic of that generation, was so useful for getting a calor gas bottle home.

You are doing the OP no favours by suggesting a Ford in preference to a Jazz.

Got one of these, great car, boot space not as large as I'd hoped and smaller than our Mk7 golf estate we had previously. Great car overall.
