It kinda depends what class of car you want. A Citroen Berlingo will have all the space anyone needs in the back and boot and also sliding door. People with disabled kids have these (at least I know some). Pure space. Then maybe you have more money and want luxury? Land rover will stock something for you. You want the space in the back but don't mind a lower car, VW Passat or Skoda superb Those are too pricey? Maybe mazda cx60 Even bigger? Toyota elgrand You want older you want newer, as the other guys say mpvs are ideal too. There are a lots of cars with decent space in the back

I was in the passenger seat of a Superb once and my mate sat behind (6ft3) asked if I wanted to move my seat back as the vast expanse of legroom was making him feel a bit weird.

I'm surprised you could hear him from all the way back there. Last time I was in the back of a Skoda Superb I had to call the guys up front to send me some car snacks to the back seat. The carrier pigeon got it to me within the hour.

We had a budget of around 10k for a family car for me my wife and 3 kids. We thought 7 seaters would be the only way but because they’re so expensive new we were left with old ones and high mileage. It was a bit of a disaster - ford galaxy the automatic gearbox went and it was cheaper to sell the car for parts. Then a Toyota verso which had no end of problems and eventually we sold it. In the end we opted for a Skoda Octavia estate and it was much cheaper to get one of these at a decent age / mileage. It’s been brilliant and fits 3 kids across the back fine. I think with the Skoda superb it might be a bit bigger but we did our homework and I don’t think it was by much. Along the way we tried lots of cars to see if they could fit 3. Cars you think are fairly big, like the SUV hybrid types (eg Kia sportage, Nissan Juke) are really small in the back and no way you’ll fit 3 kids.

Just works in my Arteon fastback for a slim middle passenger. (I wouldn't fit!) Depends on the particular child seats as well.
