Hungarian cucumber salad! Basically peel cucumber sliced as paper thin as you can manage, heavily salt (1 TBS for 2 English cucumbers) and let it sit for about half an hour. Then you want to strain and press or squeeze out at much additional liquid as you can. Then add a dressing (sugar, vinegar, garlic, sweet paprika, black pepper, and either cold water or sour cream, depending on whether you want the salad to be creamy). Mix, let sit another half hour in the fridge, and top with more paprika.

Cook some white rice (to make up about 65%), cook some wild rice (35%), diced green pepper, quartered cucumber, and some onion, mix in ranch dressing. Done.
You can also add cooked chicken breast if you want.
Trying not to eat mayonnaise so I found a coleslaw dressing made from tahini, lemon juice, soy sauce and a little honey or maple syrup. I add a garlic clove and a little Sriracha and whiz it up in my small food processor. Today I used shredded Korean green cabbage, carrot matchstick and minced green onion. Bell pepper is good too
I’ve been obsessed with Caprese salad lately. A good quality heirloom tomato, mozzarella cheese, high quality olive oil, balsamic vinegar, basil, and I sprinkle with salt and drizzle with balsamic glaze - yum!!! I eat it for my whole meal

I make it on repeat all summer and add edamame so it’s a more sturdy snack or mini lunch

If you have a lot of tomatoes, a simple tomato and feta salad works with a bunch of fresh basil and vinaigrette with a dash of lemon and pepper
