You can freeze them, obviously. But one thing I make any time I have any leftover veg is a soup. I throw the veg in some vegetable stock and blend it with a stick blender. I will then add a bit of cream, cream cheese or other similar melting cheese. You can also freeze them now and make the soup when you want. Roasted veg will absolutely make a good soup.

Freeze and save to puree into soups/stews. You can puree first & freeze, or vice versa. It will thicken your stock and it will taste amazing.
Make some little pot pies and freeze them for later

Make a savory hand pie with them or some kind of quiche or frittata.
Yup. Stew or soup & maybe thow some barley in with some extra broth. Barley plays very nicely w pot roast veggie leftovers.
Make hash browns/home fries with the potatoes. 😊 Carrots can go into a soup.
