To be honest, it seems like a bit of a reach to me. I was also an oblivion fanboy and played Skyrim from day 1, granted I was like 12, but that connection never seemed obvious. Especially given what I mentioned before, there are no unguarded knees in the game unless you are forsworn or wearing fur armour. So at *most* it could be a reference to how, in Skyrim, you will often run into adventurers with no knee protection.
I think it's more likely it was just a comedic throwaway line referencing a "sport injury" that would cause an adventurer to give up their career and take up guard duty, and it became a meme due to how often it was repeated by every guard in the province.
I googled around to find something to support this idea, and all I found are some Reddit threads posing it as a possibility, with all the top comments saying "thats quite a reach". Some of them quote the Skyrim fandom wiki Easter eggs page as a source, but it can no longer be found on the list of Easter eggs, presumably because there's no source and it's pure conjecture.
