Imo. The definitive Marvel universe that’s not a comic is either the Avengers Earths Mightiest Heroes cartoon or the Lego Marvel Superheroes videogame, not the MCU.
Yeah. The MCU didn't have the X-Men and Fantastic Four, who are HUGE Marvel figures. Yes that was due to limitations. But that also limited just how "definitive" it can be
Be that as it may, we're not going to be seeing Iron Man, Black Widow or Captain America interact with them. Nor do I reckon we'll be seeing much of Thor, Hawkeye, Hulk or other of the original founding members of the Avengers interact with the X-Men or Fantastic Four
Arrowverse was junk most of the time but it did build up a solid live action version of the DC Universe. It covered quite a bit, from the street level stuff to superpowers to time travel and multiverse. Even more than the annual crossovers I loved seeing all the little nods to the other shows, like a magazine cover of Mayor Oliver Queen or the Legends contacting the DEO to deal with aliens.
Hate that the team formed after CW COIE didnt get to call themselves the Justice League. They earned the buildup to the League forming unlike the movie version.
I'd be surprised if anybody didn't say the DCAU. Putting nostalgia aside, it really got to the heart of many of DC Characters and introduced young viewers (myself included) to a wide swath of underrepresented and underappreciated characters. I'd even go as far as to say that many of the people in this subreddit wouldn't have gotten into DC comics, and maybe even comics in general, had it not been for the DCAU. I know that's definitely true for me.
Personal Favorite: DCAU
Objectively Speaking: Batman the Brave and the Bold as it seamlessly integrated multiple generations of heroes relatively accurately through a retro lense. Not to say other's haven't but that show leaned into as much DC lore as it could including the wacky parts.

The one that I’d consider the closest in scale would be the Arrowverse.
I loved YJ, but I’d never say it’s the definitive DC MCU after season 2 (loved season 1 but couldn’t get by the fact that Wally is basically gone from season 2, Kon and Meg were broken up and there was a whole ass 5 year time gap!!)
But I’d also consider the Lego games to be a pretty good definitive DC MCU!!
While I think the "obvious" answer is the DCAU or the Animated Movie Universe.. my favorite and the one that I feel understood characters the best, was Brave and the Bold. All of the characters actually felt close to their comic characters, and it truly made everything in that universe actually feel connected

None and that's the problem with WB's treatment of DC in film and television.
DCAU - Batman TAS, Justice League, Batman Beyond etc. doesn’t get more definitive than that.
I would have liked to see what The Batman (2004) was planning with its Justice League.
And that tease of Batgirl and Robin starting up a "teen division" of the League
