That’s a very broad question and depends a lot;
Burger: Bunsen;
Pizza: Pi, Manifesto, Junior;
Japanese: Yamamori, Musashi;
Italian: il Vicoletto, Dolce Sicily, Rosa Madre;
Irish food: Mulligans;
Steak: FX Buckley;
Kebab: Oasis in Smithfield (better kebab than Zaytoon imo);
Just some top of mind and some places I’ve been a while ago don’t remember name;

To add to the others:
Chinese food: taste of Hong Kong, bullet (both do HK style BBQ), m&l szechuan, mr lees charming noodle (braised beef noodle soup!!!)
Ramen: Nomo (everything else is blasphemy)
Kebab: Passion4Food, Reyna
Pub food: Sheehans
Pizza: bonobo and kodiak are also really up there, and they are nice bars, too!
Thai: Full Moon
Tacos / Burritos: Tacos Lupillo
Right now, the "best" food is probably Chapter 1 (consistently) or Bastible (depending on the day etc). Liath is up there too, but probably more for the experience than a guarantee of dishes you won't ever ever forget.

My favourite pizza place in the whole of Dublin is Pi. There's one on George's St and another in Temple Bar.
Pigeon and Seagull pie.
