There are different types of kimchi, some of them taste rank some don’t. But the best ones imo are the ones made and imported from South Korea. I’ve tried ones made from China and they taste horrible tbh.
Also the vegan ones tend to taste better cos no fish sauce.
You can make your own pretty easily too. No need to let it ferment unless you want the sour funky taste (which some people don’t like).
My recipe for quick kimchi is this:
Cut any veggies into whatever size you want. Add some pinches of salt. Wait 10 mins and then drain. Add gochugaru (Korean red pepper flakes) and other seasoning (garlic, ginger, green onion, soy/fish sauce, whatever you like). Then eat.
If you want to make authentic kimchi to ferment, I recommend Maangchi’s recipes.
Jongga brand kimchi from Costco slaps so hard
weird I find the non vegan ones taste better cause fish sauce and anchovy paste. the umami really helps cut through that acidic vinegar fizzy fermented taste

im the opposite, im also korean and i feel like korean food is my only safe foods because the home cooked stuff (not like 길거리/포차 food obviously) is relatively low calorie and made with healthy ingredients

Even now that I live in a capital city (central Europe) it's still difficult to get gochugaru!???!! I actually just bought a bag today for almost 20€ ouch 🥲 why are a bunch of pepper flakes so expensive 😭
So it depends on the temperature. When I make it, I leave it in the kitchen for a few days for first ferment (in the summer it's like 2-3 days, but now when it's still cooler outside it's more 5-6), then I burp it, taste it, leave outside to ferment for longer if it's not sour enough or store in fridge.
The fridge doesn't smell, because I use jars with a good seal. It only smells when you open it for those few minutes. When I use shittier jars, the fridge has a slight garlic smell, but nothing bad really.
You can eat it right away after the first ferment, but I like my kimchi funky, so I leave it in the fridge for a few weeks so the flavor is stronger.
Another option: pickled green beans or asparagus. Also prepared lupini beans in brine (must be prepared a specific way or they will kill you lol)
If it’s a pickled or fermented vegetable or legume, I will eat it
Kimchi over white rice, poached egg, kewpie or spicy mayo, and furikake.
So fuckin’ good.
Perfectly good with just kimchi and rice too, but personally I gotta add at least a little bit of furkikake and/or ponzu/soy sauce.
I wish I liked kimchi 😭😭😭 it looks so good. I love cabbage so why the heck. Guess I’ll stick to my spicy pickles and boom chicka pop (cause I like the name)

I did have brief access to a Costco around two years ago, got that huge tub... Was an awesome two weeks for me. I think I'm immune to probiotics and to that effect, fiber, cuz I didn't feel any different.
I love kimchi but be careful consuming too much of it at once. You’ll run out of it in the jar and then be sad.

EXACTLY! For some reason I can find Gochujang very easy but not gochugaru? I don't understand why??
