Use them in stir fry or with eggs. The good news they are frozen and will keep well in the freezer.

Varaben

Or combine it and make fried rice. I sometimes will take leftover rice add veggies or (hopefully) meat to it then add a fried egg on top. But you can also actually do the eggs mixed in with the veggies and rice (or just veggies in OP’s case). Lot of variations there for cheap. Hope you love eggs lol.

Immense_Cargo

We have a recipe that we make weekly for quick breakfasts: 1 dozen eggs, 1 lb. of ground sausage, 1 1/2 cups of diced onion/pepper mix, 4 oz shredded cheddar cheese Brown the ground sausage and drain the grease. In a separate bowl, mix the browned sausage with the eggs, pepper/onions, and cheese. Pour into a 9x13 glass baking dish that is coated with cooking spray. Bake at 350 deg until eggs are firm and edges start browning. (35-45 min) Cut into 8 pieces. Reheats in microwave for roughly 60 sec. Pairs REALLY well with a toasted bagel, to make a quick and filling breakfast sandwich.

malepitt

add celery, and you've got "holy trinity" for all your cajun recipe needs

JasonZep

This is probably the best suggestion, but just to add I would also make quiche or egg bites.

Wooden_Discipline_22

I made a Cajun quiche recently with onion, pepper, shrimp, Gaunciale, paprika, bayleaf. It was awesome

vibraslapchop

Yeah i was thinking gumbo myself

SubstantialPressure3

Dirty rice Etouffee Even Cajun Mac and cheese with sausage or whatever you've got.

petederner

Phillie sandwiches

RandomChurn

Yes! Cheesesteak sandwiches!

oobiecham

Never seen it spelled this way, but yes philly cheesesteaks are a good bet with this blend.

MoneyPranks

That’s because it’s spelled incorrectly.

jgeigzz

On italian sausage with a little cheese

notsurewhereireddit

A *little* cheese?!

SufficientPath666

If you add some diced fresh or canned pineapple and sweet + sour sauce, you can make sweet + sour chicken, tofu or beef

anKerrigan

now THIS is an idea.

luckyartie

For a different flavor, roast them! I do onions and peppers a lot. Spread them (still frozen) on a baking sheet. Spray or sprinkle with a little oil. Add salt. Roast at 400 for about 30-40 minutes. I’d check them at 30.

anKerrigan

TIL you can roast frozen veggies. I always assumed they'd be too soggy. I'm gonna have to try this!

skampr13

I roast this kind of mix with frozen hash browns (shredded or squares, not the patties)! Top it with eggs and it’s a great weekend breakfast!

luckyartie

Ooh yum

discoglittering

If you roast them longer, the liquid will evaporate! Edit: longer than fresh, not longer than the suggested time.

SecretCartographer28

Then you can blend, and make soup! 😋

MoodiestMoody

Sheet pan dinner with your favorite sausage is easy, or use a skillet if you prefer. Add seasonings or other vegetables if you want. A stir fry is another option. You could even use them in a curry. Soup is a possibility, too. That bag wouldn't last long in my kitchen, as much as I cook with onions and bell peppers.

idonthavetoomanycats

this is a huge reason i buy frozen veggies! we’re vegetarian so we use alt sausage but it’s such a quick and easy meal

FPGA_engineer

> Sheet pan dinner with your favorite sausage is easy We do this frequently when our garden is producing. We will add tomatoes and okra as available as well. Some times we will substitute chicken leg quarters for the sausage.

Head_Staff_9416

I had a chuck roast that I got at a good price and made italian beef- some italian seasoning on the roast, beef broth, onions and peppers and cooked in the crockpot until it fell apart. Delicious.

anKerrigan

Temptation to break out the crockpot... increasing...

Sharp-Adeptness3404

Soup!

anKerrigan

I'm still working through a huge batch of chili I made over the weekend lmao but soup is a good idea!

MoodiestMoody

The chili would have been a good use as well.

anKerrigan

Yeah, I ended up using the last of a seasoning blend for my chili, but in retrospect I probably could've added a little something from these bags of peppers and onions too. It was a "clear the cupboards" chili though so I was already running out of room in the pot! 😂

CatsCoffeeMakeup

They'd be good in something like a Stuffed Pepper Soup!

MoneyPranks

Tortilla soup is my number one use for this blend.

GardenGal87

Omelets, mix with hash browns or chopped potatoes, use in a soup or jambalaya

shef10101

Those are part of the ingredients for sofrito! Can use to make a variety of sauces, rices, soups, meats in Italian, Spanish, and Latino cooking. Also can be used in the holy trinity for Cajun cuisine! Some examples (not mine) are below and I’m sure can be adapted for frozen blends https://mortadellahead.com/italian-soffritto-recipe/ https://www.masterclass.com/articles/how-to-make-traditional-spanish-sofrito https://latinamommeals.com/recipes-that-use-sofrito/

Bitch_Please_LOL

I like to use them with diced potatoes, and make potatoes O'Brien. Basically it's onions, peppers, and potatoes that were diced up and then fried in a frying pan until everything is cooked through and delicious! https://www.google.com/amp/s/www.food.com/amp/recipe/potatoes-obrien-25545

anKerrigan

I LOVE POTATOES O'BRIEN I can't believe I hadn't thought of this.

Aww yiss this is one of my favorites!

isglitteracarb

Cajun seasoning instead of fajita then add to pasta + a little heavy cream/your preferred cream substitute. Great with chicken or shrimp if able to add that protein.

soniplaystattn

I make most of my meal prep bowls with peppers and onions - first comes to mind is taco bowls, but yo can easily implement them into most dishes as a veggie source.

JolyonWagg99

Italian sausage sandwiches, stir fry, curry.

SmellsPrettyGood2Me

These are begging to be blended with some tomatoes as a soup/gazpacho.

Lonely-Air-8029

ad_astra1

roast them and then blend it into salsa

juanmtgman1

Omelette

New-South-9312

Sauté them in a pan a little, add KFI butter chicken sauce, simmer, add cooked chicken, serve over rice 😋

Mediocre-Source-920

Hell, just about anything. Onion, bell pepper and garlic are pretty much the start of everything I cook. Jambalaya, start with sauteing the veggies, then add chicken and/or sausage, once they're brown add a cup of rice, 2 cups of water and a few tsp of your favorite Cajun season. heat to boil, cover and simmer until most of the water is gone. Chili. Hamburger steaks with gravy. Peppered steak. Heck, it's even the start of my Mom's Holiday Sausage and Cornbread dressing.

AceyAceyAcey

Asian stir fry Chilli Chicken soup

GoblinMonk

Curry

Fangsong_37

We often cook those with instant ramen.

jhnnynthng

Dice and cook with riced cauliflower (or just rice) and ground beef and cheese. My wife adds some queso and sour cream on the top and it's great.

CuteGold3

I put them in everything! Frittatas, sausage dogs, pasta, rice- I keep a bag in my freezer at all times to bulk up the veggies in any recipe

anKerrigan

I keep misreading "sausage dogs" as "sausage, dogs" and going NOOOO THE DOGIES. At least twice now I've done this to myself. Deeply silly of me. But sausage dogs do sound really good.

CuteGold3

LOL that is so funny! Don't worry no dogs were harmed in the making of dinner (unless hillshire has some explaining to do ha)

cfofosho

Top a pizza/flatbread Put in a frittata Use as a sheet pan bake with some other veggies and a protein. I do one with bell pepper, onion, diced sweet potatoes, Brussels and sliced sausage of any type. Bake on a sheet pan and toss in sauce of your choosing after. It goes well with a maple Dijon sauce.

sillybelcher

Omelets Sausage and peppers served over rice or mashed potatoes Toss in a mix of baby corn or water chestnuts and some Asian condiments (soy sauce, sesame oil, oyster sauce) and some meat or tofu and make a stir-fry Cheesesteaks Serve with meatballs and marinara sauce over pasta

Thuban

Stir fry. Caramelize them for Burgers/subs Fine chop throw into Mexican rice. That's just off the top of my head

Eldritch-banana-3102

Sauté with thawed corn, lima beans or edamame, and diced andouille. Serve over rice with hot sauce on the side.

Godzirrraaa

Omelettes/egg scramble.

Providence451

I throw them in a pan with sliced sausage and fry it up, then eat over rice.

KoleOfSolomon

Omelette

getbackchonkycat

I add them to omelets, mix with ground meat for burgers, meatloaf, chili or sloppy Joe's to help add flavor and extend the meat, I use them mixed with rice and ground meat and a sauce to make a stuffed pepper bowl, you could put them on any sandwich that calls for sautéed onions and roasted peppers. They would probably work for fried rice or a stir fry, too.

randomwords83

Breakfast bowl! I use bell peppers, onion sautéed, cut some potatoes and toss them in the air fry, crumble sausage browned, scrambled eggs- put it all back in the pan and sprinkle with cheddar cheese. I eat it as a bowl but my kid loves to put it on soft tacos for breakfast tacos. Oh! Editing to add, I also use them when I make meatballs for meatball sandwiches, I just toss them in the pot with the meatballs & sauce as they’re cooking.

Groeneus

Look into Cajun recipes. Onion carrots and bell peppers are the flavor base of a LOT of Cajun cooking.

anKerrigan

omg I JUST bought Slap Ya Mama seasoning for the first time cuz I kept hearing about it (it's great btw), this must be kismet.

Famous_Mirror8973

Recently I used them in a pasta salad. It thaws the veggies and cools the pasta simultaneously for a delicious, crisp summer dish!

Lazy_Title_8155

I use them in spaghetti sauce when I make it. Usually 1 can crushed tomatoes, 1 can of diced tomatoes, basil pesto to taste (usually 1 tbsp), and then the onion and bell pepper blend. If you want to you can add ground beef to make the sauce thicker. Sooooo easy and fast. Can also use it for pot pies. I like to make a sausage (Polska kielbasa) and potato hash. I just dice everything, season, and throw in onions and peppers, and cook either on stovetop on in the oven very fast and easy. I do a poor man’s shrimp and grits that use onions and peppers for the sauce. Honestly, you could use it for a ton of stuff. Soups.

Whatabout-Dre

You can make a recaito which is the base in a lot of Puerto Rican cooking.

anKerrigan

I don't think I've ever had Puerto Rican food before, I'm gonna have to look into this.

247cnt

Add harissa and fingerling potatoes and make spicy breakfast potatoes in the airfryer! Make pasta sauce and you can freeze extra.

Illustrious_Dust_0

Just hang on to them and throw them in meals as needed. Anytime I use onions or peppers I chop extra and throw them in the freezer. They cook faster after freezing and it’s easy to have some ready to go.

Add potatoes. Fry/roast. Add protein of choice like eggs & bacon for breakfast, or chicken or steak for dinner. Add sauce of choice. You can also roast then puree them to put into sauces like marinara.

ilove-wienerdogs

I roasted those veggies alongside Mediterranean chicken kebabs for dinner last night. Was delicious!! Edit: You can most definitely roast em up in your air fryer too

ChickenNugsBGood

Cook them like you would for fajitas, but add italian sausage. Add it on a hoagie or a wrap

Agreeable-Fill-8467

stuffed pepper casserole! i chop everything up, onions, bell peppers, ground beef, canned tomatoes, rice, add cheese and throw it in the oven and it’s so good!!

Lord_of_Ghouls

I love adding them to diced potatoes or hashbrowns. Doing a breakfast casserole or breakfast tacos with eggs would be a good way to use them up. You can't go wrong with adding them to homemade Chipotle bowls, too. Stir fry would be another good way to use them up.

taniamorse85

[Unstuffed pepper bowls](https://www.cookingclassy.com/unstuffed-pepper-bowls-made-with-ground-turkey-and-cauliflower-rice/). I made them last week to use up some stuff I had on hand, and they were pretty good. I didn't have the cauliflower rice, so I just cooked some rice separately and added it to everything else.

emanluvsmuff3618

Omelettes

Fighting_Patriarchy

If you put the original product bag inside a plastic freezer bag and press extra air out before closing, they will last much longer in the freezer.

[deleted]

I use it in my crockpot a lot because I'm lazy, lol. Frozen onion+bell peppers Chicken thighs (can be frozen too, it's still good) Half a jar of korean bbq sauce just to cover the chicken. Two cups of chicken bone broth. Sometimes I also add a sprinkle of chicken boullion powder and paprika depending on if the sauce is salty enough or not. High 4-6 hrs or Low 8 hrs Turns out like braised chicken. Eat with rice. Edit: to fix format

easyontheeggs

Chili

Spare_Employer3882

I sautee them until they’re good and soft/flavorful (in a little olive oil, add s&p, maybe garlic) use it to top lots of things. Hot sandwiches, burgers, steak, put em in tacos.. you could look up uses for onions and peppers. These are honestly one of my favorite “cheats” when I’m short on time. No washing or chopping! Not quite as good as fresh, but my family still loves them.

moonlitjasper

similar flavors to fajitas, but i cook mine up and throw in a can of fire roasted tomatoes, a can of black beans, and a bunch of spices. once that cooks for awhile i add two cups of cooked rice, lime juice, and shredded mexican cheese, mixing and keeping on the heat until the cheese is melted. it’s so good and gives a few days of leftovers, highly recommend with frito-style chips.

LadySamSmash

Veggie Soups Add to potatoes for hash and home fries Throw in with meat for stir fry Cook with tomato sauce and sausages and serve over pasta Use as a “rack” and lay chicken on it, season and bake.

Enchilada soup: shredded (cooked) chicken, can of black beans, can of corn, large can of enchilada soup, frozen peppers and onions, season with salt, pepper, cumin, chili powder. We usually do this in the slow cooker. Serve with sour cream and cheese on top and tortilla chips on the side.

If they’re frozen that’s a good thing they’re not gonna go bad you don’t have to use them fast. I would right away use them in omelets or mixed in with scrambled eggs for breakfast. Toppings for a nacho platter, in a stirfry over rice with chicken, you can make a bell pepper soup!

No-Locksmith-8590

Fry up italian sausage and have it on a bun. Or no bun and fry up potatoes and have a skillet meal.

ThePickleistRick

If you thaw them they’d make great kebabs

Omelet, breakfast tacos, Asian dishes, add to squash, mushrooms, Brussel sprouts, pasta sauces and I use them in an awesome shrimp dish I serve with rice.

221b_ee

I like to mix them into my meat loaf!

Hieremias

My kids demolish pounds of bell peppers every week. They’re by far the most eaten veggie in this house. Just slice them up and keep in a container in the fridge. Make sure you have hummus on hand and you’ve got a healthy snack. Onions last a long time but you can dice and freeze them if you’re worried about spoilage.

esqape623

This taco soup, which is super delicious, makes a ton, and freezes well. 2 pounds Ground Beef (96/4) 15 oz can Sliced Stewed Tomatoes 10 oz can RO-TEL (diced tomatoes with green chiles) 15 oz can Black Beans* 15 oz can Pinto Beans* 15 oz can Whole Kernel Corn* 2 packets Taco Seasoning 1 packet Ranch Dip Mix 12 oz bag Frozen Pepper & Onion Blend 12 oz bag Frozen Broccoli & Cauliflower Florets 8 oz Fat Free Cream Cheese, room temp 1 cup (227g) Fat Free Greek Yogurt Heat a large pot over medium-high heat. Brown the ground beef before breaking apart and fully cooking. Once the meat is fully cooked, add all the canned ingredients and seasoning packets. Stir to fully combine and bring to a boil. Add the frozen vegetables and reduce to a simmer. Cook until the vegetables are tender, about 6-8 minutes. (The soup will be thick but the vegetables will release water as they cook.) Reduce the heat to low or turn off the heat if you're planning to serve immediately. Add the cream cheese and Greek yogurt and stir until evenly incorporated. Serve with cilantro, diced onion and jalapeño, shredded cheese or queso fresco, and tortilla chips, if desired.
