This is one of the few things I panic about when I run low. I use it in a dozen things but meatloaf and mango habanero pulled pork are my two favorites.
I sautee them until they’re good and soft/flavorful (in a little olive oil, add s&p, maybe garlic) use it to top lots of things. Hot sandwiches, burgers, steak, put em in tacos.. you could look up uses for onions and peppers. These are honestly one of my favorite “cheats” when I’m short on time. No washing or chopping! Not quite as good as fresh, but my family still loves them.
similar flavors to fajitas, but i cook mine up and throw in a can of fire roasted tomatoes, a can of black beans, and a bunch of spices. once that cooks for awhile i add two cups of cooked rice, lime juice, and shredded mexican cheese, mixing and keeping on the heat until the cheese is melted. it’s so good and gives a few days of leftovers, highly recommend with frito-style chips.

Add them to an omelette! Stir fry them with other seasoning and have them as a side to chicken, fish or steak. Add them onto a burger. Put them in. Tortilla with greek seasoning and Tzaziki to make a greek veggie wrap. Lots of things you can do!
Throw in some garlic and you’ve got a start on a nice pot of chili. You could also throw it in some scrambled eggs or do a nice frittata, or throw a handful in the sauce if your having pasta.

1 cup (227g) Fat Free Greek Yogurt
Heat a large pot over medium-high heat. Brown the ground beef before breaking apart and fully cooking.
Once the meat is fully cooked, add all the canned ingredients and seasoning packets. Stir to fully combine and bring to a boil.
Add the frozen vegetables and reduce to a simmer. Cook until the vegetables are tender, about 6-8 minutes. (The soup will be thick but the vegetables will release water as they cook.)
Reduce the heat to low or turn off the heat if you're planning to serve immediately. Add the cream cheese and Greek yogurt and stir until evenly incorporated.
Serve with cilantro, diced onion and jalapeño, shredded cheese or queso fresco, and tortilla chips, if desired.

This is one of the few things I panic about when I run low. I use it in a dozen things but meatloaf and mango habanero pulled pork are my two favorites.
Chili
I sautee them until they’re good and soft/flavorful (in a little olive oil, add s&p, maybe garlic) use it to top lots of things. Hot sandwiches, burgers, steak, put em in tacos.. you could look up uses for onions and peppers. These are honestly one of my favorite “cheats” when I’m short on time. No washing or chopping! Not quite as good as fresh, but my family still loves them.
similar flavors to fajitas, but i cook mine up and throw in a can of fire roasted tomatoes, a can of black beans, and a bunch of spices. once that cooks for awhile i add two cups of cooked rice, lime juice, and shredded mexican cheese, mixing and keeping on the heat until the cheese is melted. it’s so good and gives a few days of leftovers, highly recommend with frito-style chips.

Enchilada soup: shredded (cooked) chicken, can of black beans, can of corn, large can of enchilada soup, frozen peppers and onions, season with salt, pepper, cumin, chili powder. We usually do this in the slow cooker. Serve with sour cream and cheese on top and tortilla chips on the side.
Omelets, add some mushroom and spinach and you've got a great veggie omelete!
Quesadillas
Add them to an omelette! Stir fry them with other seasoning and have them as a side to chicken, fish or steak. Add them onto a burger. Put them in. Tortilla with greek seasoning and Tzaziki to make a greek veggie wrap. Lots of things you can do!
I like adding them to the BBQ sauce (store) when I make BBQ chicken
Throw in some garlic and you’ve got a start on a nice pot of chili. You could also throw it in some scrambled eggs or do a nice frittata, or throw a handful in the sauce if your having pasta.

If they’re frozen that’s a good thing they’re not gonna go bad you don’t have to use them fast. I would right away use them in omelets or mixed in with scrambled eggs for breakfast. Toppings for a nacho platter, in a stirfry over rice with chicken, you can make a bell pepper soup!
Fry up italian sausage and have it on a bun. Or no bun and fry up potatoes and have a skillet meal.
If you thaw them they’d make great kebabs

My kids demolish pounds of bell peppers every week. They’re by far the most eaten veggie in this house. Just slice them up and keep in a container in the fridge. Make sure you have hummus on hand and you’ve got a healthy snack. Onions last a long time but you can dice and freeze them if you’re worried about spoilage.

This taco soup, which is super delicious, makes a ton, and freezes well. 2 pounds Ground Beef (96/4) 15 oz can Sliced Stewed Tomatoes 10 oz can RO-TEL (diced tomatoes with green chiles) 15 oz can Black Beans* 15 oz can Pinto Beans* 15 oz can Whole Kernel Corn* 2 packets Taco Seasoning 1 packet Ranch Dip Mix 12 oz bag Frozen Pepper & Onion Blend 12 oz bag Frozen Broccoli & Cauliflower Florets 8 oz Fat Free Cream Cheese, room temp 1 cup (227g) Fat Free Greek Yogurt Heat a large pot over medium-high heat. Brown the ground beef before breaking apart and fully cooking. Once the meat is fully cooked, add all the canned ingredients and seasoning packets. Stir to fully combine and bring to a boil. Add the frozen vegetables and reduce to a simmer. Cook until the vegetables are tender, about 6-8 minutes. (The soup will be thick but the vegetables will release water as they cook.) Reduce the heat to low or turn off the heat if you're planning to serve immediately. Add the cream cheese and Greek yogurt and stir until evenly incorporated.
