Rice cooks better in large amounts (no idea why) so I cook extra for fried rice and other dishes.

Also known as ramen eggs, a soft-boiled (or in our case hard-boiled) egg marinated in soy sauce and spices. I have a house full of teens and young adults, and soy sauce eggs are their favorite snack. I make a dozen at a time, and they're gone in a few days.

I get a little carried away when I’m trying to perfect a recipe and have been on this overnight oats kick for about a month. At first I used only old fashioned and it was too mushy, then only steel cut and it was not mushy enough… lol. Here is my current formula if you have a food scale. 28g old fashioned oats 28g steel cut oats 11g honey 175g unsweetened vanilla almond milk 85g nonfat greek yogurt 1 tablespoon pb2 powder 1 tablespoon flaxseed 1/2 teaspoon cinnamon Mix and into the fridge overnight. Top with dried or fresh fruit of choice in the Am. Enjoy!

Ahahahahhaa I've been visiting family this weekend and today I ended up eating mapo tofu with ground pork and noodles, taro bread, Hokkaido milk tea woth boba, Wetzel's Pretzels bites, alfredo pasta, a Klondike bar, and two slices of pizza... I'm usually a more balanced eater, I swear 😅

Just had a baby and had gestational diabetes, so I’ve had a lot of carbs! Breakfast: wheat toast with peanut butter and Marion berry jam Lunch: oatmeal and a Naked Juice I had a corn blueberry cookie as a snack. Dinner: lasagna we made before the baby came. Dessert was going to be strawberry shortcake but that’s been put off until tomorrow!

I love overnight oats! I will be saving this recipe to make I am also a very huge fan of coconut so sounds perfect to me. I just tried feta cheese for the first time , is it me or does it taste similar to blue cheese?

For breakfast I had Greek yogurt with honey, sweetened dried pineapple, butterscotch chips and strawberry jam. For lunch I had roasted asparagus with poached eggs, feta, and a lemon vinaigrette, two slices of steak, trail mix & a mini orange. Dinner I had a mix of take out beef chow fun, Mongolian beef and rice. Snacks I had a fruit salad.

Well I ate 2 empanadas de crema for breakfast, and 2 tacos de carne asada for lunch that a friend gifted to me, he also gifted me some meat so I bought a bolillo and made a sandwich for dinner.  You don't have too many options if you're trying to stretch $16 as far as possible.  But today I was not hungry so it's a good day

Protein bar for breakfast. Splurge meal for lunch with mashed potatoes, gravy, roast, rolls, and green beans (moreso because of volume i ate). Dinner was a kraft mac and cheese cup and a chicken breast. Also a protein shake later on. I was fine until the family went to get shaved ice and ice cream.

Went and hiked a few very steep miles today. Lunch was a cucumber, cheddar, and summer sausage. Dinner was a rack of ribs with a side of collards at a barbeque restaurant. It was an abnormal eating day for sure considering I never go out to eat.
