Lore-wise, they're all major characters in relation to the whole grace and Erdtree stuff, each in their own way
But I'm no lore expert by any means so you'll have to take my shallow answer with a grain of salt
Hoarah Loux and Gideon are both major characters and you can't complete the game without talking to/fighting them.
As for the other three, while they aren't strictly integral to the plot, completing the questline for each one gives you a mending rune, allowing you to alter the ending...

I just wanna say, my first play through was dual wielding 1h axes in full Kaiden gear for the Viking cosplay.
And that’s how I fought him. The Horah phase with him just swinging wildly while I did the same with my axes was a 10/10 experience. No spells, no fancy tricks, just two warriors locked in a mortal duel 🤺. It felt like such a huge, appropriate respect as he fell and uttered that.

The point in the game I see this most is in liurnia tunnel and doing the platform to get a smithing stone off the wall. I have failed that platforming more times than any boss or even the platforming for the frenzied flame
