If you know how to clan hem the right way, i caught a 15 pound pike in Central Quebec, by the time i cleaned it “ Y Bone Free “ i had maybe 3 pounds of fillet. I felt horrible for wasting so much! Many people do not know how incredibly tasty Pike Are. I think they are just as tasty as walleye. I rarely keep them because if the Y Bones though. I just keep a few walleye which are the easier fish to fillet.
I guess depends on what you make out of it. Around here smaller pikes are often used to make patties/meatballs, so you can leave in the smaller bones. Not much waste then. Not sure if that's a thing in america tho.
Well, the secret behind the patties is my lovely fiancée. But she uses a blender to ground the meat, meanwhile adding water. It should become somewhat smoothie kind of a paste. Then she adds smetana (type of a sour cream in here with big fat content). Then mix eggs, breadcrumbs, salt and lemon juice in a different bowl and let it set. Afterwards mix the fish/cream and breadcrumb paste together and add fresh dill according to taste. Fry them on a pan in butter. Depending on the consistency you can either make patties or meatballs.

So do you filet it in a way that you just take out the spine and rib bones?
That's the way I've done it so far, cutting fat fillets from the back and sides, leaving in the y-bones. Atleast when making patties.
