Not what you asked, but I have found after years of experimentation, that me and my guests prefer just salt and pepper when using skirt/arrechera, not pre-marinated.
When it's flank or ranchera/flap, I like Vallarta!

I go to Vallarta. It's always been good in my experience. Fun fact - Vallarta started as a butcher shop and claim to be the 'original' carne asada for what it's worth.

This is the best. Too many grocery stores and carnecerias use Sazon. It's terrible.
Their ranchera is the best I've eaten in LA, it's so wonderfully marbled and their marinade tastes really good imo.

in the South Bay I like dayro on marine, or el gaucho on MB blvd and Inglewood. Dayro is a cheaper and a smidge better in my opinion but both are good
El Gaucho is the spot for me. Also has empanadas. A little different from other places as this is an Argentenian butcher, but they know beef.
