It won five Oscars, including Best Picture, so I definitely think it qualifies as highbrow by most standards.
But you're right -- it's not snooty or inaccessible or anything. (Not that all or even most highbrow movies are! Just joining you in trying not to scare people off.)

I seem to remember Niles being portrayed as a bit of a film buff. Don't they mention once that Roz saw him waiting in line to see Lawrence of Arabia when he was supposed to be apartment hunting? He also brings over a copy of "The Unbearable Lightness of Being" when he's dating Daphne.
Niles references Basic Instinct (without naming it) when he says he rented it and he and Maris pushed their beds together that night (no mean feat, as her bed is across the hall!)
Marty seems to like Angie Dickinson movies, and he mentions Death Wish and some non-specific Jean Claude Van Damme films. Think he also names The Longest Day as well when they're deciding between his, Niles', Daphne and Roz's films to watch.
Frasier is a lover of anything he can get hoity-toity about, there a several times when he references watching or wanting to watch some trendy poufed up film.

Not as big of a movie buff as Niles. Frasier doesn't even have his own seat cushion.
Niles and Daphne rented Tampopo - I believe that one was pretty well regarded.
