JPG even at high res tends to get 'artifacts' around text, it's more a photo format.
Best solution I found was to save as PNG (Lossless format) then run through "Tiny PNG" website for a pre-minified PNG and then upload those.
Ultimately I think Amazon outputs everything as JPG that you upload so there might not be a solution.
Also, make sure you are working with a source image that does not have this issue, i.e. a TIFF or similar and save to PNG directly.
As if the problem is with the source image, this will never get resolved no matter what format you use etc.

3. Use vector software as opposed to raster software, i.e. Adobe Illustrator rather than Adobe photoshop.
