I was in a similar situation - I was about halfway through the conveyancing process with a mortgage offer at a favourable rate when I was offered a new job. Although the new job was in the same industry with a higher salary I was concerned that accepting a  new job with a 6 month probation period would cost me the favourable rate if the lender withdrew their offer and were not willing to lend until I had passed probation.  I ended up negotiating a later start date at the new job so that I was able to complete my purchase before handing in notice at my old job, I didn't mention anything to my lender. You're supposed to inform your lender of any changes in circumstances but I reasoned that until I actually handed in my notice, there was no material change in my circumstances. It all worked out. Is this something you might be able to do?

Always worth applying and crossing the "what job do I take?" bridge when you come to it and have an offer of employment. You may interview and hate the vibes of the place, or may not even land the job. Could also take longer than you're expecting to sort out with the pre-election period in the public sector and then it's less of a worry anyway. I changed jobs just before a mortgage application, and they didn't really care but I was going from being a project manager in place A to a project manager in place B, they just wanted to see more payslips of the previous job.

You didn't get the job yet: and you can't be 100% sure you will get it. Interviews and selection process and all that... So, no need to solve a non existing problem, and yes, most lenders don't lend while you are within probation period and job description and qualification no matter.

I know, it's more that I don't want to spend the time applying/interviewing if it's a bad idea to entertain the idea of a new job while in the process of buying a house.
