Depende po sa type of meat. Wagyu is on the softer side. Naka-try din ako nung steak somewhere na nahirapan ako nguyain kahit medium rare sya. But I usually order medium rare. Try mo ulit next time medrare, OP. Baka mas magustuhan mo ☺️

Past medium mahirap na nguyain. King baka naman okay lang yung 'madugo' kasi katas ng karne yun. Hindi naman dugo. Pag naubos yung katas sa sobrang luto, dun na siya nagiging dry.

Yung tinatawag mo pong "dugo" is actually the juice na noong meat and is usually collected to make gravy or sauce. Kapag tama ang pagkaka-rest ng steak, hindi na dapat tutulo na madugo. This is a common misconception. Hindi dugo ang red juice na lumalabas sa rare/medium rare steaks. It's the protein in the meat mixed with water. Medium well is close to well done so medyo matigas talaga, mas tender talaga yung rare/medium rare

Sabi nung Chef professor namin before, everything after medium doneness belongs to the garbage. Kasi, by the time na sumobra ka na sa medium doneness, para ka nang ngumunguya ng makapal na rubber band. Most would like it tender so prefer nila ang rare to medium rare, however having medium doneness is still okay. If natatakot ka sa red liquid na lumalabas sa steak, no worries, completely safe to eat naman yun, it's called myoglobin, tubig lng yun na may halong protein from the meat.

Actually sa sobrang nipis ng cut ng steak na yan I personally wouldn't consider it a "proper" steak. At dahil nga sa sobrang nipis niya kahit na ipaluto mo nang medium rare malamang ang kalalabasan niya is medium. The best steaks depend on the type of beef (there's a BIG difference between Angus, different types of Wagyu, Argentinian, no-name beef, etc...), the part it came from, and the cooking method. Even the most expensive Wagyu cooked well done will taste like rubbery trash.

Depends on a few things. The cut from which the steak came from plus the thickness. Kung naturally tough ung part ng steak and have it cut thinner para mas madali kainin. Though meron din parts na naturally tender. Cook time pa, which, together with the thickness of the steak, will determine the doneness. Generally, thinner cuts need less time and thicker cuts need more. Yung steak sa picture mo looks to be on the thinner side, tapos medium well pa ang request mo, which means more time. More cook time sa thinner cut leads to a tougher steak. Next time, I suggest you try medium (not medium well. That's different) or medium rare. For the most part, ung medium rare ang common doneness ng mga steak, and for good reason. Also, hindi dugo ung nakikita mo from medium rare steaks. So don't worry.

Mahirap talaga nguyain yung medium well 🤦 Remember, yung reddish juice after cooking a steak is NOT BLOOD but myosin. Natanggal na lahat ng blood nung kinatay yung baka.
