This is a good call for Omlet House -f.Charleston and Rancho. Very near the freeway and heading north, out of town. Bacchanal doesn't have a great atmosphere. What if you booked a table at Lakeside [Wynn]?

Pack a cooler, not styrofoam, drive out to the Lake Mead National Recreation Area, and rent a boat. 4 - 8 hour rates. You have the whole lake, including the back side of the Hoover Dam.
If you want to have a high view then go to the top of the Strat! On a clear day you can see for miles. Or grab a great meal at the restaurant up there.

I second that, and while you are at it, catch the free fountain show while you at the Bellagio too! There is also a free fire show in front of the Mirage. The Mirage will be closing soon, so catch it before it become history. Each are only a few minutes.
I am not the biggest Vegas fan, but just came back from spending a week there on a work trip. I don’t like the clubbing, the party scene, the tourist smoking pot up and down the strip, or gambling. However, I can’t deny how visually stimulating Vegas is. I stayed on the 25th floor of The Bellagio overlooking the strip, and could have sat there all night watching the fountains, the sphere, and all of the other lights. The High Roller at sunset was also a fantastic way to spend an evening. Another woman to woman recommendation is the cocktail bar in The Cosmopolitan that is under the pink crystal chandelier. Who doesn’t love a beautiful pink backdrop? I know I did! Hope this helps - Vegas has a little something for everyone.
Part of it is just maximizing her time in the park and the other part I’d guess is the stereotype that Vegas is just casinos and partying (which my Mom thought until I took her last year and she changed her mind)
If you haven’t tried Omega Mart within Area 51 yet, it is so much fun. It was probably the best part of my last Vegas trip. It takes about 1.5 - 2 hours to walk through.

Doesn't sound like you will be in Vegas at night. But the piano bar at NYNY (the "dueling piano" show) is always a fun time, and drinks are comparatively inexpensive. That's my go-to Vegas recommendation, for an experience which feels un-Vegas like.
For lunch, my wife and I recently had an absolutely stellar lunch at Momofuku - second floor of the Cosmopolitan Hotel. The menu features modern Japanese fusion cuisine, and it's absolutely delicious. First rate cocktail menu as well, or sake.
If you have a little more time I highly recommend the Atomic Museum. Small, but jam packed with cool stuff. Frequently discounted admission available on Groupon, though I haven't been in a few years.
Not sure if this would work timing wise. If she's an avid hiker, you could take her to explore red rock canyon. Then look around summerlin area for some great food. Even just yard house at red rock casino would be amazing after hiking.
If you can't do that, then I think your arts district option sounds great. Skip the buffet, it's so overpriced and not anywhere as good as what it was before.
Even just a few dollars to take a leisurely drive around the loop at Red Rock in the interest of saving time is worth it. I couldn’t get enough of that place.
Las Vegas is more than the strip. Hash house a go go is good but check for reservations. Egg works is another one. Black bear dinner and Blueberry Hill are good all around places. If you want BBQ, Smoking pig is great.
You can find all of these places online for locations and menus.
Terrace Point Cafe at the Wynn for breakfast or lunch. You can sit outside on the terrace which overlooks the pool. It is very relaxing, quiet, and food is really good.
Take them to a show! It's the only reason we spend anytime in Vegas are a dinner and a show since we don't gamble or drink.
We use Vegas as a jumping ground to the parks and nature stuff but love the awesome show or concerts

Zion is great. If you like longer, tougher hikes, check out the Subway. it's not in the park, but nearby. one of the cooler hikes I have ever done and unlike Zion, there were hardly any people on it. might need a permit. we didn't have one and actually encountered a park ranger, but we talked our way out of it.
Esther's has been mentioned a couple times already as a great arts district spot. If you're willing to go a bit more off strip I'd reccom Eggs-cellent on desert inn for breakfast and Red Dwarf pizza for lunch. Both look completely unassuming but are hidden gems.

Because I just had some friends visit me who “wanted to spend as much time hiking as possible” and they very quickly changed their tune when they realized how hot it is. A lot of the trails they wanted to do weren’t even open due to the heat.
Last weekend in June 😬 Between the heat and crowds, she wants to get up early for the hikes she’s got planned. After a few days of that, I want to have something to look forward to in Vegas as well!
It’s about an hour detour total but on your way to Zion stop at Snow Canyon State Park. It’s about 20 minutes off i15 and takes about 20 minutes to drive right through it without stopping. Way way way less crowds than Zion.

Some notes -
If you’re looking for more nature-related Vegas items, I’d recommend Red Rock and Valley of Fire. Springs Preserve is also fantastic.
Food related, we have excellent food all over. Some of the best in the world IMO, because every talented chef wants a place here, strip or not. Really depends on what kind of food you’re in the mood for.
Off-strip activities - Area 15 and Omega Mart are solid. Also Spy Ninjas HQ for a more youthful set of activities. Visit Container Park downtown for a more modern/urban vibe.
Shows - you’ll see a lot of recs for Cirque or Absinthe, but I legit think Awakening is the best show in town at the moment.
Some notes - Summerlin in the west is probably the nicest part of town. South West has great asian food and isn't as risky as eating in China Town, but is otherwise endless suburbs. Henderson is more suburbs and old folks. northeast and east side can probably be avoided. Same with the Strip. The Arts District and Fremont East are both excellent and have amazing food, but they look a but run down still and aren't always the safest part if town.
Look, there two kinds of people. Those that love Vegas and those that don't. There may be nothing you can take them to, no more than taking someone who hates fish out for sushi. It's not going to work. Find someplace both of you like.
If you are anywhere near Fremont Street, there’s a cool shipping container “park” area that has restaurants & activities. During one of our trips to LV with friends, we went to the Downtown Terrace restaurant in that park & the food was SO good. It had a lot of good brunch type foods. I remember they had some poke nachos that we all couldn’t get enough of & kept ordering to share amongst the group.
If you want to be in the Arts District, I'd recommend Vesta Coffee for breakfast/light lunch and Esther's Kitchen for dinner if you don't want to go on the Strip for Bacchanal.
Hash House on West Charleston and a drive through Red Rock would be a good idea if you have time. Valley of Fire is more on the way to Zion though so that could be a good alternative.
For lunch, consider Letty’s on Main. They have the best quesabirria tacos you’ll find anywhere.

I rented a bicycle at a shop that is just off this really fun cycling trail. There’s a 20 mile loop that takes you to a nature preserve and a 30 mile loop that goes by Lake Mead. Incredible views of the foothills, nice view of Vegas and super fun to ride. I felt it was like a roller coaster MTB trail, but fully paved.
They open at 6 or 7 on Sundays so you can get an early start before it gets hot. It was a nice break after a few days of hiking.
We just completed a trip just like this. I’ve been to Red Rocks before, but agree they’re fantastic. We went to Hoover Dam and the Valley of fire on our way to the parks. Both were great. In Vegas, there is the Pinball Hall of Fame, Mob Museum and Punk Rock Museum. Shock them with a night walk next to the Giant Mental Manis. The Flamingo and Bellagio have interesting gardens too.
Also, there is a great morning or evening drive you can take into Grand Staircase Escalante that shouldn’t be missed taking on Johnson Canyon Road when you get out by East Zion. Plus the Coral Pink Sand Dunes.

I absolutely refuse to leave Las Vegas without visiting Omelet House. In fact I will be arriving Thursday morning and it will be my first stop.
