I agree, I think the shock is more of a ‘oh shit, we’re actually at Casa’ kind of thing. Similar to how the islanders are all shocked when they arrive on day 1, it’s more the surreal-ness of it!

The show is heavily scripted in general especially when it comes to reactions to anything they let them do things again if they don't act excited/suprised enough.

There is no documentary (or atleast i don't know it) it's just interviews from islanders, Podcasts, Q&As they do on their social medias etc.
All of them do it every season.

They know roughly when Casa is, they know it's coming. It's like the fake conversations they have right before getting a text, they're told they will be getting a text and are told to act shocked and caught off guard.
See I didn’t know that the pre-text conversations are also fake. I know that so much of it is staged/scripted by producers but have never listened to podcasts or things explaining just how much. Thanks!

However sometimes they do say "Casa" just before it's announced. So they're aware of the process and can spot the signs
