wasnt it confirmed by hoyo that canon mc is made up? like its whichever one you choose- aether is just used for the cinematics for continuity but they are for all intents and purposes the same character just different genders and that makes them interchangeable for the story.
Correct, but the way both twins are conveyed shows two different stories when you make one the MC and one the antagonist. This is why the debate happens amongst the community, when in the grand scheme of things it doesn't matter.

But they decided on using Aether later on.
