The factory recommended either 10W40 or 15W40 depending on exterior temperatures. Since you probably do not intend to drive it in winter but during hot summers, I'd go with 15W40. Doesn't matter which brand as long as it isn't complete garbage. Oil quality has improved a lot since the 1970s. Simply change the filter with every oil change. These weired intervals come from a time when filters were expensive and only replaced every second oil change. Don't use fancy 0W or 5W oils. The oil pump can't contain it over longer periods of sitting and drains empty. The five speed transmission holds 2l of 75W90 GL4. I'd replace it if you don't know how old the current filling is. The manual trans oil isn't part Of any factory maintenance schedule, since no one expected the cars to last long enough.

Yes, G11. Colour doesn't matter. Used to be green, now it's blue for some reason.

VW switched to pink G12 somewhere in the late 80s at least for tge mk2, maybe also the cacrio and Scirocco. I don't know why. They also changed nothing about the coolant system. But as G11 and G12 don't mix and it's near impossible to fully drain the system I'd just stick with whatever is inside.
