That's not what a preview is, previews allow you to see and try out things that aren't out yet. You're thinking of a demo, or a "lite" version.

Yeah, it's an understandable misconception because the icon for the education preview app is literally a bookshelf with less books. Almost as if the designers of the logo had assumed it was a demo.
You are not wrong to assume that, the preview icon has less books. This is bad design because a lot of other media would use the preview word to describe a demo version. If the icon was actually representative of the app, it would have more books on top of the shelf, or something similar to indicate testing new features.

I can't speak for Mojang and don't have much experience with bedrock beta but if I'd have to guess it's because Education Preview worlds are not compatible with regular Education and visa versa. So people with Beta enabled would not be able to join the world and can lead to confusion.\
Especially since Edu would be mostly used with young kids in schools.
Basically the same thing with Java where snapshot worlds are not compatible with the release version.
Or in Bedrock where Beta with experimental features makes the world not compatible with the Update version.
They are compatible. They just make you do a backup before allowing you in tho in case anything happens. In my experience, I haven't encountered any issues doing that
That's not true, the current beta is 1.20.70.22, which is many patches ahead of the stable release 1.20.61. This is the update that includes autocrafters and trial chambers as experimental options.
It's a two-step process, neither of the android editions of the game have a way to activate any of this without doing something in the Google Play Store first. In the normal non-education Minecraft they probably don't want to accept separate payments for stable and beta, so they are forced to use the Google Play "Join the beta" button and risk mixing data from older and newer Minecraft versions. Since Education edition is free, they can just publish a 2nd app. Firefox beta is separated for similar reasons.
"Regular" Bedrock is now separated between release and preview. I guess Mojang did this because it was frustrating to only be able to install one or the other, but not both simultaneously. Hence, separate Education and Education beta as well.
This is the case on PC, but I'm not sure of other platforms.

Well my idea before the top comment said it, is that the preview let's you do those official Microsoft edu maps and is not full with all the functions and the regular edu has all the functions but no pre made thingies to teach how to use them
The funny part isn't that they're both free, its that the preview is rated higher than the full version. which makes it seem like because you are enduring it for less time, its better.
Preview exists because people like me who went through the hassle of Xbox insider program got really mad about having to constantly reinstall the game and not getting an exclusive cape
The preview is like the snapshot system for Java edition. Early access to new features before they are fully implemented in release versions. (It’s available for regular bedrock too btw)
