Put them on everything and you won't be disappointed. It will surprise you what foods could use a little acid. I just threw a few on a BLT and it blew my mind. Make sure to layer with the tomatoes so it can make the magic mayo sauce.
I like to buy the Spicy Claussen pickles, and when I'm done eating the pickles, I thinly shave some onion on a mandolin slicer and throw it in the jar with the Claussen juice. OMG, that is amazing, a perfect "Best of both worlds" for my burger as it takes the place of both the pickle and the onion.
There's something specifically about that Spicy Claussen juice that just hits different.
Awwww shhhhiiiiit, I did that soooo many times, not just the spicy but that was the king variation!
For a few years I'd have like 4 jars in rotation cold brewing for a few weeks/months, lol, cauliflower was amazing but took a while to get saturated. Red/orange bell pepper slices, face nuke super-hots, fresh herbs, garlic slices, onions, baby corn...
Endless combos... buhhhhht, and this is important;
the more you add, the more the salt is diluted and the bacteria risks rise significantly.
I risked it frequently with no ill effects but try at own risk.
Fucking liquid gold.
Omg ! Thank
You for this great idea I’ve never
Thought about this before! I am obsessed with the regular classes dill pickles. I like the spicy too but regular are my favorite! They’re the best pickles I swear.
My first thought? Those look like they'd be absolutely perfect pulled on top of a pulled pork sandwich.
But yeah, any of the suggestions above, I don't think you can go wrong. Great job OP!
Cilantro is one of those things: you’re either all in or all out. I’m in the All In camp. As far as I’m concerned, there’s no such thing as too much when it comes to cilantro. It’s definitely my favorite fresh herb.
Oy vey, can absolutely fucking ruin tacos when you can't say hold it(food truck, etc) ... picking it off helps a bit but its still fucking there.
But if it's fully cooked into something, that green chem spice heresy isn't as offensive
Recipe I used was
2 cups water
2cups vinegar
2.5 tablespoons salt
1.5 teaspoons of whole peppercorns
Recipe called for 2 teaspoons of whole toasted coriander but I only had ground untoasted coriander so I only added 1 teaspoon
Recipe called for 1 tablespoon of whole mustard seeds but I only had ground mustard so I only used 1/2 a table spoon
Boil all of these together, as soon as it boils turn off the heat and just pour the boiling mixture over your vegetable
This is supposed to work great with cucumbers too
First time attempting pickled onions and I’m amazed with the result
Your mix is a lot li,e what I use to make Ceviche. Lime juice, salt, shaved red onion, oregano, chopped cilantro, chopped tomato, chopped cake, sliced chiles (I like a ix of jalapeño, Serrano & habanero. My wife can't tolerate ANY, so those are in a separate container for me. Pour over thinly sliced ocean fish NOT FRESHWATER, znd or chopped shrimp and or scallops to cover. Stir every hour and on three you're ready to serve.
Great with something fatty and unctuous like a steak or salmon or anything with cheese. I think these are one of Chef Bobby Flay’s secret weapons when he cooks on Beat Bobby Flay.
Cook up some fries or tots, put them on a tray like nachos, put chese make some crema(lime juice, sour cream, and heavy cream) put that on there. Next short rib or flank steak chopped up. Then top with pickled onions and green onion.

Oh my god EVERYTHING! Nachos, hot dogs, in quesadillas, throw some in your fresh guacamole, on top of grilled pork chops, in salads, mail them to me… so many possibilities
Hot tip, if you want to go the extra mile and to get that bright pink color that restaurants do on theirs, slice up a little beet and add it in. Doesn’t change the flavor just makes them look better.
This! Pickled onions (especially when they’re made with lime juice) pair absolutely perfectly with smoked, fatty meat. I especially love them with pulled pork.
I eat pickled onions nearly everyday. I add to a bed of arugula, I also add black olives and a balsamic vinaigrette dressing (also add salt) and it’s sooooooo goooood!
if you take a 90% premium dark cacao bar, slather a subtle spread of a spicy german mustard over the top, then gently garnish with pickled onions, it could be one of those things where, while likely not tasting the best, probably no one else has ever done it.
I like to smoke a whole chicken covered in spicy rub, shred it, makes sliders, put pickled onions and spicy white sauce on them. They’re a real hit around my house.
This condiment provides acid so pairing it with a fatty food like tacos or nachos is a great option. It’s also good because on tacos or nachos it would be a contrasting texture. I really enjoy topping my nachos with pickled shallots.
They would be amazing on these [Summer Aloha Tacos](https://www.gilbertssausages.com/recipe/aloha-summer-tacos). FYI, these tacos are great in the summer, but I grill them up year round, name be damned. Add a drizzle of Tabasco Sweet and Spicy sauce, and serve up with a side of [Cilantro Lime Rice](https://www.culinaryhill.com/chipotle-cilantro-lime-rice/) and you’ll be in heaven.
I made this the other day and it was phenomenal. I made a melt with cheddar cheese, I seared a couple slices of ham n sliced pear, and added a couple pickled onions on it and it was really good. Try it out
i just had a torta for the first time a few weeks ago. it changed my life. mine was a carne asada, i definitely recommend trying it if you want (they have pickled onions on them and man were they bussin)
Brussel sprout tacos . Air fry the sprouts with a splash of olive oil and balsamic vinegar After they are cooked put the pickled onions on them with a little feta cheese in a warmed up corn tortilla. Yum.
Put on Tacos.
Put on bbq meat sandwich
Cook down with some sugar and make it into an onion mustarda of sorts
Mince them up with some parsley and minced beef, add a little olive oil and salt for an awesome tar tar
On top of fish
Tacos, tostadas, chilaquiles, hot dogs, baked or sautéed fish, a charcuterie board, salads and pretty much anything that would go with an onion or a pickle...or both!
I keep a jar of these in my fridge at all times!
My favorite things to use them on are:
- bagel w/smoked salmon, cream cheese, and capers
- fish tacos or street tacos
- barbecue items like a pulled pork sandwich
- this recipe from Salt Fat Acid Heat where you toss roasted vegetables in a red wine vinaigrette:

Tacos, sandwiches, anything mild that could use some acid to make it taste better. My daughter and I make Rick Bayless’ [Pickled Red Onions](https://youtu.be/ObM31A8yLFk?si=0ov2c3qoD85uLIbV). He makes a Mexican variety that’s really good.
Shredded Kale salad with chicken, bulgur, pita chips, Parmesan and pesto + Caesar. Recipe stolen from roots NK lol but damn is that salad good, the pickled red onions are what make it shine!
I like them in a salad, and the best one I had was spinach, avocado, craisins, pickled onions, a little goat cheese, and then a little pour of the brine. Fucking amazing.
Salads! Anything from a basic lettuce salad or layered on a sandwich. I would just eat plain as a snack. Also souls be good as side garnish for pinto beans or collard greens or lentil soup.
Uhhh...everything.
I like them on sandwiches, they are really good with sardines and crackers, good in salads, we even eat them by themselves on a cracker with a little dab of brown mustard. I have put them in scrambled eggs as well. Good on pizza, good on tacos, burritos, kaysadillers, just about anything.
Apparently pbj and onion or pub and pickle sandwiches is/was a thing. My mother who was a skilled pickle maker mentioned it as a curiosity in the 1970’s but she hated peanut butter.
I use mine on anything I usually use pickled things or onions on. Sandwiches, burgers, hot dogs, salad, just to munch on.
So far I’ve just been eating them raw but I love me some burgers so that’s definitely going on the to do list
Put them on everything and you won't be disappointed. It will surprise you what foods could use a little acid. I just threw a few on a BLT and it blew my mind. Make sure to layer with the tomatoes so it can make the magic mayo sauce.
Acid is the key. It brightens flavors.
And the quality of my life.
Just don’t use the brown acid .
Omg that’s genius.
Happy accident
I would eat that whole jar lol
Same
Al pastor tacos
An italian sub or steak sandwich
Pork chops!!!
I like to buy the Spicy Claussen pickles, and when I'm done eating the pickles, I thinly shave some onion on a mandolin slicer and throw it in the jar with the Claussen juice. Brilliant and resourceful!
My first thought? Those look like they'd be absolutely perfect pulled on top of a pulled pork sandwich. But yeah, any of the suggestions above, I don't think you can go wrong. Great job OP!
My first thought was hot dogs! Mmmmm
Tacos or on top of nachos
My favorite taco topping is red onions and radishes that have been pickled with lemon juice and salt
really mines cheese
Cretin
Best nachos I ever had were topped with pulled pork bbq, fresh jalapeños and cilantro, and pickled onions. And cheese, obviously.
Now we’re talking. Except the cilantro.
Cilantro is one of those things: you’re either all in or all out. I’m in the All In camp. As far as I’m concerned, there’s no such thing as too much when it comes to cilantro. It’s definitely my favorite fresh herb.
Tastes like dish soap covered pennies to me
Oy vey, can absolutely fucking ruin tacos when you can't say hold it(food truck, etc) ... picking it off helps a bit but its still fucking there. But if it's fully cooked into something, that green chem spice heresy isn't as offensive
I love cilantro too. People say it tastes like soap and I agree, and that’s kinda what I like about it.
Yummy combo! For non-pork-eaters, I replace the 🐖 with carne asada. Drooooool!
What ratio lemon juice and salt? Water, too? I'm intrigued!
I made birria tacos with pickled onions as a topping, they were da bomb
That makes me hungry pickled onions + birria🤤🤤
Omg my husband made those last cinco de mayo and they were amazing but so rich/fatty! Definitely a special occasion dish.
S T R E E T T A C O S!!

Fish tacos!

I always pickle red onions Mexican style (lime juice, vinegar, salt, pepper, oregano, no water) but I like the idea of mustard in this recipe.
Your mix is a lot li,e what I use to make Ceviche. Lime juice, salt, shaved red onion, oregano, chopped cilantro, chopped tomato, chopped cake, sliced chiles (I like a ix of jalapeño, Serrano & habanero. You should add whole cumin seeds. Adds a ton of the “Mexican” flavors.
That and sliced Habanero peppers
Just found this sub and now my mouth is watering. Definitely need to try this recipe. Thanks!
Great with something fatty and unctuous like a steak or salmon or anything with cheese. I think these are one of Chef Bobby Flay’s secret weapons when he cooks on Beat Bobby Flay.

This! Pickled onions (especially when they’re made with lime juice) pair absolutely perfectly with smoked, fatty meat. I especially love them with pulled pork.

This condiment provides acid so pairing it with a fatty food like tacos or nachos is a great option. It’s also good because on tacos or nachos it would be a contrasting texture. I really enjoy topping my nachos with pickled shallots.
