It’s safest to choose the sink w number of holes based on the faucet u choose. Three holes is for separate hot and cold handles and spout head. One hole is for single faucet that had temp control on it. Water = potential damage so match faucet to sink.
If it makes any difference in your decision making, most faucets that are single hole come with a deck plate to cover the two that aren't being used.
That being said, if you plan on using a single hole and want a clean look without the deck plate, get a single hole top. If it doesn't matter to you, get one with three so you don't limit yourself to one style of faucet.
