Some require a bit of finesse; others require strength. Occasionally you'll run into an old stubborn boy who requires plumber strength. Sometimes it's easier to cut them out if you lack plumber strength.

I have computer programmer strength, so looks like cutting! Or is this something some WD40 might help (I'd just try it, but don't have any here). Query... if one end is unconnected, does that make it easier to remove from the other? IE, if I cut close to the valve side, can I use the remaining stub of PEX to help remove it from the T? Or is it the same either way?

Trying to remove it after a cut has been made could work. I'd say it all depends on how much play is in the pipe in either direction. WD-40 probably won't help at all, but then again, I've never tried it.
