It’s critical for top level speed run starts since you can’t get a turbo boost like you can in races. Watch any of the WR speed run maps like aero, dusted, etc. and they pretty much all do the same start of jumping and thrusting forward with air roll and then snapping back down with air dodge
Sorry but that's not what they are doing. Air roll is used for bailing. It does not thrust your car at all, it is in fact, pretty useless. They air dodge at the start sideways and just use their stick to push their car down
You use the underthrust booster while your car is leaning forward using air roll and it is 1000% faster than a cold start. I only ever start speed runs that way

Only time I go out of way to use it for the big drop at the end of Conduit, I can position my car to make sure it doesn't crash into the ground. It probably has more niche uses like that.
Typically not too necessary for normal races. It is used for Speedrun mode at the start of every race and saves between .3s and .6s depending on the map. If you are hunting WRs and stuff it has some niche uses and is quite underutilized IMO.
I found 3 uses for it other than at the start for some WRs I set. One at the start of olympico allowing me to land on a wall after using my flip, one in tilted turns at the end to land on the side of the road, and one on Anaconda bite to land on a tree at the end allowing you to do an extremely fast turn.
When I came back to Rocket Racing, whenever I would hold my boost, I would air roll… without realising. The first time I saw this I said very calmly to myself: “What the f*ck!?” whenever my car would do ten pirouettes in the air. I turned air roll off, all is well in my head now.
I had to do a lot of looking but I finally found a video where someone uses it somewhat convincingly:

The exact same thing as the car spins or twirls in rocket league but much slower.

I use it literally all the time to get my boost back off something instead of dying.
If air roll is the term I'm thinking of its awesome at certain checkpoints to cut the corner and end up further along
