My head canon is that they are a species that are born from the force, where every so often (probably once every few centuries), one of their kind will be hatched throughout the galaxy. Probably in biomes like Dagobah, a nexus of the force with lots of life. Their "eggs" grow from within some sort of plant life, a random mutation brought about from the will of the Force, in the same way Anakin was born from Shmi without a father. Hence why they have high M counts, and every time we've seen one they have been Jedi Masters. It would also explain why they have no name or culture to speak of, there are rarely more than a handful alive at any given time.
Looking at this comparison, I want to know at what age would Grogu's eyes change to look like Yoda's? Grogu has solid black while Yoda has the pupil, iris, etc.

The Thrawn novels say they're derpapadoos. One of Thrawn's spies is a derpapadoo who gives up rebel deployments.
