What color is the oil? I’m pretty sure that real pure olive oil is supposed to be a greenish color, not yellow. If it’s yellow it’s probably adulterated with seed oils.
Also, brands that cut their olive oil with seed oils will add stuff to the oil to make it taste like olive oil, so taste testing isn’t ideal to determine real olive oil.
I'm italian and it looks good to me. A lot of people here are saying that all of italy's olive oil are cut with seed oils, and while it's true that there is some shady shit going on (mostly in the south with exporting bad quality oil), most of the good quality oil, like this one, is trustworthy and of great quality, and this looks legit to me. It's made near where i live and this one has certifications that need the oil to go under a lot of controls and it would make it impossible to adulterate it, you can see it on their website, it's not one of the common cheap exported olive oil. Do not listen to the people that see one article once and then say that all of italy's oil is adulterated. Yes do not buy low quality cheap olive oil from italy but eat high quality oil like this one. Also your description of the taste and the color is another point in favour of the oil authenticity
I think the reason Olive Oil is accused of adulteration is because of sitting on a shelf for long enough to degrade. Simply put: the polyphenols is what protects you and the oil. Without the polyphenols, it's simply an Oleic Acid supplement, and I am absolutely not a fan of something like that.
Yes of course in italy we know that olive oil has a certain shelf life and you have to keep it in dark bottles and in cold rooms, but a good olive oil has vitamin E and it lasts between 1-and 3 years depending on the type, so it is completely doable to sell it in the us in his original form
Try to find olive oils from Portugal, Spain and Croatia from small ethnic stores that directly import it. Italian olive oil has been exploited, and it is so corrupt that the government has a police force dedicated to taking down producers of fake olive oil in Italy. That industry makes more money than any of the other mob run operations there.
