Oil started off way too hot then ended up way too cold! Soggy oil saturated potatoes that way! Also always double fry. Once at 300 for 5 minutes then again at 350 for the final texture. If you don’t double fry they won’t be fries they will just be fried potato. The texture will be completely different. If you’re expecting McDonald’s fries forget about it because McDonald’s literally uses their own unique species of potato lol. Good luck getting some.
