Do you have a picture of the complete job or Atleast a larger area? Those sure do look like factory edges.

That tile was probably just poorly manufactured. We'll get tiles like this or boxes that you can still see the cuts from the factory saw.

Someone needs to create an "Ask a Tile Pro" subreddit and restrict this one to Tile Professionals and DIY'ers with technical questions or work to show off. Half of the posts on this sub lately are from people trying to find ammunition to use against their chosen contractor. If you want to be able to nitpick at the slightest details of the job, then you should find the most reputable contracting company in your area, pay the highest price, and wait until they can get you onto their schedule. Make sure to tell them "Money is no object" when you hire them.

I doubt you could see this without getting close but either way, there should be no reason for this as the only time they would have to cut the tile down was a scribe cut in the corners and bottom/top rows. I will say though, I have done this because I made a mistake before (on my own shower). I had to shave 1/8” off the long edge to get a tile to fit in between two tiles that had already set up (a big mistake on my part). I took care to polish the edge well to look like a factory finish and placed the tile. Because it was only 1/8” off an 11 7/8” tile, no one has ever noticed, and even after pointing it out it’s hard to see without a tape. This, however, looks like it’s quite visible and you can see the deflection in his saw when he starts/finishes the cut (the flaring out of the cut right at the end). Looks like they didn’t polish the edges that well either. Poor setting practice for sure, but he could have been making up for a mistake or lack of material (no excuse, but throwing out some reasons as to why they would have done this). I’d be curious to ask him why this is. Measure the tile and see how much he cut off and maybe that will help you figure out why he did it. How does the rest of the shower look?

Some tiles are not made square at the factory, even worse they aren’t all made the same size. If he trimmed them this was probably why. Looks like he stoned a slight arrised edge to give you the best look with cheap tile
