You might also look for a Costco Business Center — the one around here sells them (as culotte). About $6/lb. Slightly less reliable quality than the premium ones mentioned above, but still our go-to. And still mega delicious.
About how long did it take to reach 125-130°? I’m going to make a couple this weekend alongside some ribs but I’d like them to finish about the same time. I’ll obviously go to temp, but curious on a range of time. Thanks. Looks great!
I believe, unless things have changed, you can only get a full tri tip out West. I grew up in the East, never saw a tri rip roast, moved west and they were very popular. Moved back East and do not see them around. I do see tri tip steak tips which are essentially a roast cut into strips. If you are in the East you probably need to order it online.

Cutting a Tri-tip across the grain is the difference between amazing and this is chewy. All Tri-tips are different but I've never seen one cut this way. Interested because you may have found a way to make more uniform cuts of Tri-tip vs the normal 3 cut method where you have a 2 sections of oddly sized slices, but they're very tender.

yea i’ve never tried ordering it. i’m fortunate that i’m from the city srf is from but i’m sure there’s a way larger selection online

Yes! If I’m being honest tri tip might be my favorite thing to get from SRF
their brisket is pretty solid too

like an hour and a half. very fast cook. just make sure you don’t overcook before the sear

Dumb question I know, but what does a smoked tri-tip taste like? It is more on the steak side or brisket side?
steak for sure. tri tip is a very lean cut. i like mine more on the rare side
