Remember that you can freeze their rockets and that gasoline makes them trip like in Violent.
I reccomend staying far away, freezing their rocket's and spamming p-boosts, saws, coins, everything works against them, but saw traps especially shred them like crazy. Setting up 2 saw traps in the final room of 7-4 next to the stairs where the guttertanks walk up will kill them very quickly. Depending on the difficulty, you can also bait out a punch by getting close and dashing at the right moment.

You can pause the rockets and then whip them into it. Also they are pretty large so they are easy targets for sharpshooter stuff
