The Sans fight is straight up the best boss I’ve seen in any game ever when you take the entire thing in. He is the ultimate culmination of *everything* the entire game is about in gameplay and especially narratively.
If I wasn’t lying down in bed I’d write a gazillion word long essay about why he is, but to put it “”short”” (lol its not gonna be short); he’s the *only* monster that *actually* knows what’s going on with you, and *how* to counter you. While Flowey represents a video game player, Sans is the direct foil of one, and he does a really good job at it. Not only does he have the hardest and most complex attack patterns, not only does he have unique and confusing new mechanics, and not only does he kill you faster than any other, he goes *even further*. He literally tells you to go outside, to sfop playing the game, and to forget about it. “It’s a beautiful day outside. Birds are singing, flowers are blooming…” “well, hey. take if from me, kid. someday… you gotta learn when to QUIT.” This is exemplified when he pulls out literally the ultimate, most powerful attack possible in a video game: literally removing any interaction at all and trapping you in a box forever. Obviously this doesn’t work because plot-armor based determination means we have to be able to complete the route somehow, but the message gets across.
There’s *so many* other things I could talk about, with the fight being the payoff for literally the entire game, how Sans effectively manipulates and plays 5D chess against you across space-time, but I wont get into it since Sans is probably the most complex character in anything ever and acts as his own encapsulated FNaF-lore (seriously what the fuck is the badge he has in his workshop this is a fnaf 4 box level threat).
As a final note, the only boss I’ve seen that comes close to Sans is Slave Knight Gael of DS III, for distant yet surprisingly similar reasons narratively, albeit I’d still say Sans comes out on top
Undyne the Undying! It’s basically just two super-sayan characters going at it with their strongest attacks! For me this was the true high point for geno because I hate the sans fight.
First up, both of the genocide fights are masterpieces and I hate that I will never try them again lmao
Apart from that, I enjoyed Mettaton and Asgore a lot.
My ranking of only the main bosses
1. Mettaton EX
2. Photoshop Flowey
3. Asgore
4. Papyrus
5. Sans
6. Undyne
7. Toriel
8. Asriel
9. Undyne the Undying
10. Mettaton NEO
Photoshop Flowey

Purely mechanically, it's Sans, Undyne and Mettaton, but when it comes to fun, it's Asriel
