What I do is a bit different in that I mix my blue cheese with some extremely spicy hot sauce(Think Reaper/Scorpion….etc) while the wings are coated in either a dry rub(nothing better than a crispy wing) or a cheaper hot sauce(I’m not using a $15 bottle of hot sauce to coat my wings). Full immersion. You start with some heat, get the cooling tart fatty taste of the blue cheese, before getting kick in the pants by the real heat.
