Pandora Hearts, Noir, Tsubasa Resivor Chronciles, are some of best works. But since they're all a bit older so many forget about them. But they all have BANGER soundtracks.

As much as I love MIA, my personal favourite ost is still from Kabaneri. I would put MIA’s ost between 1 and 2 after the release of season 2, but prior to that, I’d say LotL was better.

I think my biggest gripe with the soundtrack is that the worst tracks are the ones you hear the most. Notably NLA Day/Night. And by the end of the game the soundtrack devolves into 4-5 tracks

Fr. People chastise Bleach for pretty much everything but if there's one thing that Bleach doesn't deserve slack apart from it's drip is it's ost's. It has a perfect mix of emotional and hype themes.
Anything by Joe Hisaishi. He isn’t appreciated much on this sub but more widely it’s not so rare to see him considered amongst the all time greats, not just for anime music but for film music and even classical music as a whole.
Got to see him conduct the Prague Philharmonic Orchestra. Probably the most emotional I've ever been attending a concert. He is still touring, but I'd expect him to retire soon enough. So do please go see him if you have the chance!
Gundam Seed and Seed Destiny’s stories may not be the greatest, but no one can deny both the vocal and instrumental soundtracks are great
It’s been fun watching clips of the new movie and recognizing/remembering the the OST that plays during some of the scenes
Don't forget Asami Tachibana! She bring a lot of the more tense tracks ifthe Spotify credits are to be believed. Love Yuki Hayashi, but that soundtrack benefits so much from being a collaboration.
Re:Zero has some of the best OSTs in anime, in my opinion. Honestly, without its diverse soundtracks, I wouldn't be as emotionally attached to the series as I am today. My favorite is "Requiem of Silence”. It’s what makes episode 15 of season 1 so emotionally captivating.

Yuki Kajiura is the goat of OSTs imo. SAOs quality is quite controversial at least, but I never hear anyone complain about the OST. Most people agree that is an outstanding aspect of the show.
And SAO is not even Kajiura's best work I'd say, that has to go to Madoka Magica imo.
Too bad that's arguably the only good thing it has. Damn, how did they manage to fuck it up so bad? The manga was amazing, I'll forever wish for a remake like FMAB

Better off searching by composers and watching the stuff they scored.
* Yuki Hayashi brings the hype.
* Hiroyuki Sawano peaks high but also has some absolute turds. Love his work on average but man is his bad stuff really bad.
* Yoko Kanno is wildly diverse and talented.
* Yuki Kajiura shines when doing haunting and beautiful, but can also do exciting and energetic.
* Kevin Penkin does great work but for some godforsaken reason they usually mix his soundtracks really quiet for the actual shows (besides Made in Abyss).
Shinichiro Watanabe is a director with excellent taste in composers. All of his work has a soundtrack worth checking out.
If it was popular, then they wouldn’t have been reluctant to release another season and wouldn’t have released a report saying that the anime does not sell enough (the report is in Japanese) 🤷🏽♀️
Some underrated picks include:
Mushishi- the soundtrack helps build the atmosphere so well
Girl's last tour- Similar to Mushishi, the soundtrack builds the atmosphere of a post-apocalyptic world, equally calming as it is eerie and haunting.
86- Hiroyuki Sawano brings the soundtrack to another level of hype and emotion.
Made in Abyss- Been mentioned many times before but this is Kevin Penkin's magnum opus, incredibly powerful and moving.
Sousou No Frieren- The soundtrack has so many amazing songs that fit hype fight scenes, relaxing scenes and everything in between. There was never a moment when I felt the OST was not appropriate.
Movies:
Kara No Kyoukai- The incredible soundtrack helps elevate the show (series of movies) to an ethereal level during its story telling and especially its action scenes.
RADWIMPS and Shinkai (Kimi No Nawa, Weathering with You, Suzume)- an incredible duo of producer and musicians who create an emotional soundtrack fitting for each show. One of my personal favourites.
Liz and the Blue Bird- Kensuke Ushio's best soundtrack, despite all his other amazing works. It makes the movie even more intimate and personal, the beats of the music following the emotional beats of the movie. You could watch this by itself but I recommend you watch Hibike Euphonium Season 1 at the very least.

If it's the later there's probably samurai champloo, Gundam, gintama, ergo proxy, any ghibli, not to forget one piece and bleach and finally space dandy (the new one) and cowboy bebop. Depends on your music taste I would say. I do love "***March comes in like a lion***" for its quiet songs, or "***Your Lie in April***" with its classical songs. But then there is also "***Initial D***" or "***MF Ghost***" with heart pumping eurobeat. =D
Oh and recommending a show with a wild variety of songs would be "***Space Dandy***".

Each time you listen to tracks in the OST, your mind goes back to those scenes, and the emotions in the scene amplify because of the soundtrack. Also a great OST to work/study/relax or sleep

Toradora! And Re Zero have perfect mood fitting music. Like there was a part in Re Zero season 2 part 1 that was insanely intense and the music made it even more of a wonderful scene. I can’t find it but it was fantastic.

Symphogear, since you get double the value. Not only do you get close to 100 Banger songs, but the BGM osts are just as good. (The legend Evan Call even worked on 2 of the 5 seasons)
My absolute number one answer to this will continue to be Wolf's Rain. Yoko Kanno was famous in the industry for good reason and that soundtrack in particular was god-tier.
Almost all the comments mention epic or grandiose soundtracks. If you like ambient or instrumental soundtracks, I recommend listening to Kensuke Ushio. List of popular works includes Chainsaw Man, A Silent Voice, Ping Pong the Animation, Devilman Crybaby, Heavenly Delusion, and Dangers in my Heart. Absolutely phenomenal music that I always have in my top artists weekly.

Ghost In The Shell: Stand Alone Complex. There are a lot of tracks that only appear in the show as well that we cant find on any of the official OST's and they are all really good.
The OST is great to listen to on its own and is paired so well with the scenes in the show.

Grew up with Gundam SEED and SEED Destiny’s sountracks and I have to say, incomparable. Tatsuya Ishii’s “River” is my fave.

Some underrated picks include: Mushishi- the soundtrack helps build the atmosphere so well Girl's last tour- Similar to Mushishi, the soundtrack builds the atmosphere of a post-apocalyptic world, equally calming as it is eerie and haunting. 86- Hiroyuki Sawano brings the soundtrack to another level of hype and emotion. Made in Abyss- Been mentioned many times before but this is Kevin Penkin's magnum opus, incredibly powerful and moving. Sousou No Frieren- The soundtrack has so many amazing songs that fit hype fight scenes, relaxing scenes and everything in between. There was never a moment when I felt the OST was not appropriate. Movies: Kara No Kyoukai- The incredible soundtrack helps elevate the show (series of movies) to an ethereal level during its story telling and especially its action scenes. RADWIMPS and Shinkai (Kimi No Nawa, Weathering with You, Suzume)- an incredible duo of producer and musicians who create an emotional soundtrack fitting for each show. One of my personal favourites. Liz and the Blue Bird- Kensuke Ushio's best soundtrack, despite all his other amazing works. It makes the movie even more intimate and personal, the beats of the music following the emotional beats of the movie. You could watch this by itself but I recommend you watch Hibike Euphonium Season 1 at the very least. Musicians you should look out for: Kevin Penkin \[Tower of God, Apothecary Diaries, Made in Abyss, Spice and Wolf Remake\] Kensuke Ushio \[A silent voice, Liz and the Blue Bird, Chainsaw man, Ping pong the animation, Devilman Crybaby) Evan Call (Violet evergarden, Sousou no Frieren) Hiroyuki Sawano (86, Attack On Titan, Bleach Thousand Year Blood War, Solo Levelling, Kill La Kill just to name a few)

Wait are you asking for osts as in opening and credit songs or do you consider yourself a true cinefile/audiophile and are asking for background productions? If it's the later there's probably samurai champloo, Gundam, gintama, ergo proxy, any ghibli, not to forget one piece and bleach and finally space dandy (the new one) and cowboy bebop. For me what makes a good anime is the combination of great OST and action, check Hells paradise, vanitas no carte, akame ga kill, attack on titan obviously.
Since no one has mentioned it yet, Re:Zero has some of the most memorable OSTs in my opinion.

Your lie in April !!!!!! With a music based romance anime, you'd expect it to have a great OST, but ohh my God, was it great or was it godly. Each time you listen to tracks in the OST, your mind goes back to those scenes, and the emotions in the scene amplify because of the soundtrack. Also a great OST to work/study/relax or sleep

Toradora! And Re Zero have perfect mood fitting music. Like there was a part in Re Zero season 2 part 1 that was insanely intense and the music made it even more of a wonderful scene. I can’t find it but it was fantastic.

I enjoy most of the code geass osts they are iconic and super catchy. And then code geass is one of the goat so even better!

If you’re fine with a slice of life kinda anime, i’ll go with the tatami galaxy, i personally liked the soundtracks.
Symphogear, since you get double the value. Not only do you get close to 100 Banger songs, but the BGM osts are just as good. (The legend Evan Call even worked on 2 of the 5 seasons)
My absolute number one answer to this will continue to be Wolf's Rain. Yoko Kanno was famous in the industry for good reason and that soundtrack in particular was god-tier.

List of popular works includes Chainsaw Man, A Silent Voice, Ping Pong the Animation, Devilman Crybaby, Heavenly Delusion, and Dangers in my Heart. Absolutely phenomenal music that I always have in my top artists weekly.

Ghost In The Shell: Stand Alone Complex. There are a lot of tracks that only appear in the show as well that we cant find on any of the official OST's and they are all really good. The OST is great to listen to on its own and is paired so well with the scenes in the show.
