Ah, Hey Bulldog... a great song, but sorta obscure unless you are really a fan.
Cute story: when my twin daughters were about 4 or 5, their great grandmother's nursing home had a performance from a local Beatles tribute band. My daughters thought it was the real Beatles. They were excited to get to meet them during a break, and get some drum sticks from "Ringo". He asked if they had a favorite song that they wanted to hear... and they both said "Hey Bulldog". Ringo was surprised and quickly said they'd have to brush up on that one and maybe play it next time, lol.
There are good Beatles fans who sort of stick with hits. The Beatles have a little over 200 songs. From my experiences, a decent fan might know 50 or 60. And that's a lot of songs.
I love the three songs you mentioned. I think YNGMYM is one of the best things Paul ever did.
But most people do not know songs like these. Nothing wrong with that at all, btw.
I think you nailed what might be one of the most poignant moments in all of beatles vocals… no matter how many hundreds of times I’ve heard it, it still gets me every time.

Here’s my angle- this song is so popular that long time serious Beatles fans might not pay it as much attention as they once did- Twist and Shout: John’s voice is just mind blowing. I played it for my hard core/metal loving son and he even appreciated how he screams on that track. It’s really fantastic.
Every Little Thing. Written mostly by Paul, though John's voice looms large in the song.
A tender song of devotion and the emotions are real. Written as a contender for the next single. It didn't get there and ended up on the B-side of Beatles For Sale.

The Continuing Story of Bungalow Bill!! It is overlooked in my opinion or if isn't, it's hated.
Also it's not a completely different song, but I find the Anthology version of Across the Universe (Take 2) the best take on the song, it's way better than album or naked versions!

That Means a Lot from Anthology 2. It’s mixed like shit but that’s what I like about it. To me It’s a precursor to the psychedelic sound in music from around 65’ and 66’. Also Ringo’s drumming is in the same vain of Ticket to Ride.
Baby You’re a Rich Man is randomly the most played Beatles song in my library. it doesn’t come up when I’m thinking about my all time favorite songs by them, but I guess there’s just something about it that is extremely listenable and I keep coming back to it without noticing it lol
