I know that when I came back from parental leave there was a stipulation in the paperwork that said if you don’t come back on the scheduled return date you could be terminated and they would use the start date of your leave as the date of termination. Idk if this matters to you but thought I’d share

Nope. There is a condition that you can't make money while using PTO or something like that. So make sure you quit before you switch.

Stating the obvious, but don’t quit until you have an accepted offer, pass contingencies and establish a start date.

I did the exact same thing as you. You can technically give 2 weeks notice while on parental leave. No they cannot do anything.
