These were originally referred to as chicken fryers. The deeper sides make it more useful for such than a standard skillet. It's a convenient way of frying small batches without having to use a bunch of oil.

I learned my mother’s recipe for Mac and cheese ! Follow the directions on the Mullers elbows package and double the cheese ! Eyes were opened while I was learning to cook in my first apartment.
Ooooo, this would be a bitchin pot pie maker! The high sides means no mess when the filling inevitably boils over.
Pro tips:
* make the crust from scratch, it’s not hard. Use a wine bottle if you don’t own a rolling pin (I’ve been washing and using a bottle of Kirkland vodka for yonks, and the Pastry Police have yet to arrest me)
* swap out half the water the recipe calls for with vodka.
* swap out 5-15 ml of what’s left with apple cider vinegar
Gluten activates with water, so adding ethanol lets you work the dough more before it can get tough. Gluten doesn’t form as well in acid, so if you drop the ph just a smidge that gives you some wiggle room, too. The final crust has a je ne se qua of a flavor you can’t quite identify, other than “yum!”

Haha. I’ll use this pan for goulash for quick two person serving. I’ll use a cast iron Dutch oven in my smoker for when I’m needing more servings. I use the pellet smoker for this technique. Using a Kamado or Big Green Egg will make it too smoky. 60% wood pellet mix, 40% charcoal pellet.
I bet this pan would make a baller chicken parm. It’s always so difficult to get enough oil in the bog standard skillets, but that wouldn’t be a problem here!
I just used my Dutch oven to make some carne guisada on the stove top for dinner tonight! Has to simmer for like an hour nothing makes it better than my Dutch oven

Not a cast iron owner yet, but one of my go-to dishes is frikassee and I always feel like my normal sized stainless isn't deep enough. I think it's a 12 though,10 might be a little too crowded for the browning part.

My summer activity so far has been to have a fire in my fire pit, and once it’s down to coals, I throw my pan on there and cook something. 10/10 I love it feels like I’m camping in my backyard

Check your other skillets, there might be one in the house already which fits.
Also, Goodwill sells lids separate from pots in my area (perhaps other thrift stores do likewise). They usually have a wide assortment. Take the ID and the OD measurements of the top of the pot and look around. Keep the pot in the back of your car and if you find something promising tell the staff you want to bring your pot in to make sure it fits.
Sometimes you will find a heavy glass crock-pot type of lid which would work very well for a fryer.

I have a similar pan, a Wagner from the 60s and it is, literally, a "Chicken Fryer". A deep pan like that is made for frying, so have some fun!

I use my 12” for frying, but I wanted a deeper one and been eyeing one of these. It’s not a need, but a want. Would be great for baking though.
