Purebred cat trade is tiny and they don't intermingle with other cats so most cats continue to breed without human intervention and thus have no selective breeding in them. They aren't "muddled", they're just natural animals like everything else that doesn't have breeds.
I think you're partially correct, breeds like the Ragdoll and Ragamuffin are breeds that were more recently "created" by humans by mixing other specific breeds to "engineer" some intended result. However, there are breeds that are native to certain geographical locations. Have you ever noticed how a lot of the TikTok or Instagram videos from Asian countries feature cats that look a bit different? (I am sure a lot of people on here will know the exact names of the breeds, however I do not.) They have the cute little folded ears and some other features that I don't commonly see here in the US. I think it's just kind of like any other animal as far as evolution and eventual intermixing. Similar to the Akita breed of dog which I believe is native to Japan.
Those aren't breeds originally, wild cat species and phaenotypes from around the world just look different. We've turned them into breeds through selection but there is no such thing as a "naturally occuring breed". That's not how genetics work
There were never wild Akitas in Japan, they're still produced by humans, just starting very long ago.
