Wayland with Nvidia is still a source of troubles, so you need to manually enable it.

do you have these packages installed? plasma-workspace-wayland and kwin-wayland-backend-drm
OP uses GNOME, not KDE
Debian + NVidia + Wayland = problems Not worth the hassle, wait for debian 13...
