Scott Cunningham wrote a book that to my knowledge was fairly well received by the witchcraft community - it could be a good starting point and the correspondences of each stone may be familiar to your partner's pagan customers.

Judy Hall has written several books I think you’d find helpful. One is Crystals for Psychic Self Protection and another is a two volume encyclopedia about crystals.

I really only know things about crystals through experience and experimentation. You can look up separate meanings or buy a crystal encyclopedia. Most have one or two elements they're associated with, more likely one than two. Same with zodiac signs. Different shapes do different things, different variates might also do different things. Then there's care, some are harder, some are softer, some can touch water, some can't, some can't be in the sun, some can, some can touch salt, some can't, etc.

I only know of a couple, but not as much about ritual. I think the only crystal I've used in druid rituals so far has been salt, which is primarily used to represent the element of earth. Carnelian - courage, strength, energy. Also associated with the goddess Brigid. I've used it to represent the element of fire when lighting a candle is ill advised. Jet - protection, recovery, and well being - physical, mental, and spiritual. I tend to wear this one more than have it as part of ritual or altar. Quartz is magnifying. Ive used it to represent wind, largely due to the coloration and not any particular property of it. Jade - longevity, protection, wisdom, and nobility. I have jade set in a world tree decoration for the earth element just generally on my altar, though salt tends to be the one asked for by rituals.

Your girlfriend will be best served by using her own intuition to create the pieces because she is using her energy and intent to make them. Her demographic market will respond well to that. A good guideline is to use the typical color associations that correspond to the chakras.

Judy Hall has a few books that are very accessible. I don't love her take on Crystal Magik. I think it is a little woowoo, but if you just need to know it well enough to capitalize on crystal-mommies, she's she's good resource.  To clarify, because I'm dragging the crystal hippies right now, practice Magik however it works for you. My practice is entirely internal and I do not believe Magik can affect entities beyond the practitioner. Crystals do not vibrate autonimously, they resonate. Thank you for coming to my Ted talk.
