It took me a bit to figure it out but now those levels are some of the easiest. I have the soldiers that don't ever pick up food, the half ratio medics that pick up food only when the battles done, and an army of 30+ workers that are actually gathering the food the whole time.
For fighting, both 5.1 and 5.2 I start with the top right mound. First 2 waves of soldiers build the 5 medics, after that I build the worker army. Attack the termite workers as they're going/leaving, and switch to no attack/pick up food to leave before the termite soldiers come.
I don't leave leave though - I rally to the ramp right below and wait for all but 4 soldiers to leave, then I go attack again. This can start getting you a steady stream of termite bodies - as much as your workers can hold - as you slowly kill the termite army. In both 5.1 and 5.2, I don't leave the top right mound until I have an army parked at their entrance and they're not feeding me enough. I stick to harassing one mound until I get strong enough to go faster.
5.1 I also kill 2 of the queens before the end, as you get like 4k food to loot the whole place. It makes getting a big store ready for the scorpion easier
In both I'm essentially only doing underground stuff during the first couple days of sun time. After that I'm strong enough to raid a mound straight up so the timing doesn't matter. In 5.2 I build compact so I'm never fighting stink ants.
Adding onto the 5.1 killing 2 queens thing, If you have enough medics (for me I did around 60) and around 30-50 soldiers, You can basically survive the emperor Scorpion attack on impossible. Granted It costed me like around 2000k food so maybe I could of invested in soldiers to lessen how much food was spent but it was completed
It makes it an absolute joke in medium, and I was doing the strat in NG+3, but I'm working my way through the levels on impossible now on a fresh run to check the viability

Without upgrading?
What difficulties did you try this strategy?
