I feel like Lois is one of the regulars like at a bar. The sad people that come in every day because they have nothing better to do. They keep the lights on, but they aren't exactly your favorite customers.

Why would she be? The point of the episode is that she believes she's more important to them than she is. She's one customer of many. I'm sure she would have won it eventually but there might be hundreds of regulars. It's the woman equivalent of the lonely guy who assumes the supermarket cashier might go on a date with him because they had a conversation once and she sometimes smiles at him.
She also comes across as trying too hard even before she went insane.
They were assholes bc she deserved it. She’s good with service worker names it’s been shown throughout the show and she was considerate of the allergy. They snubbed her

It's hard to notice, but there's some minor details showing that all of the people who were customer of the week were friends and neighbors of the baristas. Plus, Lois talks a lot and takes forever to make her orders so they probably think she's annoying.

I always thought its because they just put all the costumer names in a bowl and picked one at random somehow, that's why Terry newcostumer won.

a Karen is usually used for someone who snitches to the manager over small things, I never seen Karen used in a context like this
Being a Karen also means that thinking the world revolves around you, you're special, entitled etc, that's why they do the snitch thing.
