Because communication is about both what you say and what you don't say. We have a conventional word for pig meat eaten as food: pork. If you say "pig meat", you're implying that there's a *reason* you're not calling it "pork", like it's not made of traditional meat, or it comes from another animal that you can get away with calling a "pig" (guinea pig?), etc
It's a type of meat that is usually hard to find because it is illegal in most places, usually for moral or ethical reasons, though there are health concerns as well. While not actually from a pig, it's been described as being similar to pork.
I dunno, some people just like to bring it up as "long pig" for kicks, I guess. This post made it easy by referring to the dish as "pig meat" instead of "pork."
I, however, as an enlightened individual, get my kicks by providing long-winded responses while dancing around its explicit meaning.

I mean, phrasing any form of meat like that sounds wrong. Cow meat, fish meat, crab meat, chicken meat, it all sounds weird put like that.
"Crab meat" is a pretty common one
We do that in Germany.

Why is "pig meat" 100x more offensive than "pork"? I can't explain it, but I feel it.
‘Pork’ implies some degree of selectivity about which parts of the pig are used for meat.
More likely because it reminds us pretty strongly that we're eating an animal. Beef also sounds somehow less gross than cow meat.
