1st pic, egg cups two ways. On the left: ham, cheese, tomato and chive. On the right: ham, cheese and spinach. 2nd pic, sugar and dairy free banana blueberry muffins (which were surprisingly a huge hit with my 6yo and 4yo, they ate 13 of them lol).

schluffschluff

How did your muffins turn out? My banana muffins are never fluffy, always stodgy and destined to be chucked on the floor 😔

chilly_chickpeas

Texture-wise they were good. Taste-wise they were so bland lol. The baby and my 6 and 4 yo really loved them so I’ll mark it down as a win.

Do your egg cups not stick to the paper a lot? Felt like I lost like half the egg when peeling it away.

heggy48

Not OP but I make mine in silicone cupcake cases and they slide out perfectly.

chilly_chickpeas

I spritz them with olive oil spray.

eroomztlaw

I am there with you! Every version I make I lose so much to the wrapper

Lopsided_Mastodon_78

I really, really need to start doing this!! These both look great!

w33hzy

Can you freeze the eggs?

nekooooooooooooooo

Yes! The, freezer super well and you can microwave them to defrost them very quickly! (They also just taste better warm)

chilly_chickpeas

Yes!

Jondar_649

Beware I made egg cups to freeze and the veggies I used added too much water. After freezing they were gross

coconut723

Do the egg cups have any flour in them? I made some for my 9 mth old and I think the flour made them too hard for her to chew

chilly_chickpeas

No flour! Just egg and milk plus the fillings.

chocolateabc

Do these freeze ok? I’m going to do this tomorrow!

chilly_chickpeas

They do! I pull them out of the freezer and into the fridge the night before I need them and then just reheat in the microwave for a few seconds.

mixedbaggage

Yum!!
