not sure if this constitutes as ‘different’ but miss sina does amazing cakes that are vegan but you absolutely would not know it. So perfect for dietaries (except gluten I guess aha) and fun for the plant-curious! 🌱 if you want to bake your own, I would recommend any cake recipe by Natalie Paull (from Beatrix Bakes) - they’ve never let me down
The absolute best cake I travel from the Hills to Peakhurst for every year is the passionfruit cheesecake pavlova from Cheat Day. Needs to be preordered and so lovingly made! Serve it with a big spoon and enjoy 🎂
My idea of "different" is having cheesecake for your birthday cake, and Bakehouse at North Kellyville does a really good Oreo cheesecake that's surprisingly cheap for a cake I must say. I bought it for my brother's birthday and everyone looked at me weird for getting him cheesecake for his birthday cake, but he loved it and everyone said it was surprisingly good.
Alternatively, the smelly cheesecake do a really lovely Chiffon cake on order (not cheesecake) that I had for my birthday cake once. It's very light but with a lot of cream and not crazy sweet. Would also recommend.
Ordered several birthday cakes from little cake box and it's always been a hit with my family and friends - they have really nice asian flavours / also agree with ENZE and Koi

It’s tangy but then perfect sweet pops from the meringue. Perfectly balanced, can’t explain it but so so good
